Les voici enfin - les 60 derniers couteaux Senzo Dawn jamais fabriqués !

Seuls 150 couteaux petty et 150 couteaux gyuto de cette série existent, chacun dans une boîte numérotée. Le dernier lot de 60 couteaux (boîtes 091-150) est désormais disponible. Choisissez votre numéro préféré avant qu'il ne soit trop tard !

Quand on est un collectionneur passionné de couteaux, on commence à chérir l'histoire de chaque lame. Et ce couteau a vraiment une histoire à raconter.

Il y a plus de 300 ans, un chêne du sanctuaire de Kifune, au Japon, commença à s'élancer vers le ciel avec ses jeunes rameaux encore fragiles. Au fil des décennies, ces rameaux devinrent de solides branches, et le minuscule plant de chêne se transforma en un arbre grand et massif. Avec son feuillage luxuriant et vibrant, il saluait les visiteurs du sanctuaire à chaque coup de vent et les protégeait du soleil brûlant grâce à son ombre. Il devint un élément essentiel du sanctuaire de Kifune. Un arbre sacré. Un élément du culte familial du fondateur de la forge Suncraft.

Mais en 2019, le désastre frappa. Un typhon s'abattit sur la ville de Seki, au Japon, et le puissant chêne sacré tomba.

La forge Suncraft voulut lui donner une nouvelle vie. Avec la bénédiction du prêtre, elle le transforma en un élément de quelque chose de nouveau, afin qu'il puisse continuer sa mission d'aider les gens. Le bois du chêne sacré servit à fabriquer les manches des meilleurs couteaux Suncraft. C'est ainsi que naquit la gamme de couteaux Senzo Dawn Limited edition.

Le Senzo Dawn Limited Edition Gyuto SG2 200 mm (7,9") est un couteau japonais polyvalent, fabriqué dans la forge japonaise Suncraft. La lame est forgée selon une méthode courante de superposition « en sandwich » appelée san-mai ; le noyau en acier en poudre SG2 est enveloppé de couches d'acier plus doux, créant un magnifique motif damassé noir de jais aux reflets dorés. Le couteau est trempé à environ 62-63 HRC, ce qui signifie qu'il restera affûté très longtemps. La composition et la microstructure de l'acier offrent un tranchant extrêmement fin et doux. Le couteau est doté d'un manche japonais octogonal traditionnel en bois stabilisé, surmonté d'une mitre spéciale fabriquée à partir du bois d'un chêne sacré vieux de 300 ans.

Ce couteau est une magnifique pièce de collection et est livré dans une jolie boîte traditionnelle japonaise en bois de paulownia, incroyablement légère et robuste.

FORME DE LA LAME :

Le gyuto est la forme de lame la plus polyvalente et la plus utile dans une cuisine moderne. Son profil large facilite le transfert des aliments et tend à être assez plat vers le talon, permettant de hacher facilement et rapidement sur la planche à découper. Une pointe effilée permet de percer et d'effectuer un travail précis et délicat. Une légère courbe entre la pointe et la partie centrale rend le ventre idéal pour faire basculer la lame d'avant en arrière lors de la découpe. Il peut être utilisé pour couper la viande, le poisson et les légumes.

ACIER :

L'acier SG2 est un acier en poudre, réputé pour sa dureté et donc pour sa tenue du tranchant - grâce à sa forte teneur en carbone (C) de 1,5 %. Cet acier est également riche en chrome (Cr) - environ 15 % -, ce qui améliore sa résistance à la corrosion, ainsi qu'en molybdène (Mo), qui renforce la résistance à l'usure de la lame. Les lames en acier SG2 peuvent atteindre un tranchant très fin grâce à la microstructure fine de l'acier et le conserver sans avoir à se soucier de l'entretien et de la corrosion.

GÉOMÉTRIE :

La lame est affûtée des deux côtés (selon un rapport de 50/50), ce qui lui confère une géométrie à double biseau avec un profil plat, et permet son utilisation aussi bien par les droitiers que par les gauchers.

LAMINAGE :

La lame est fabriquée selon la technique san-mai. Le noyau en acier en poudre SG2 est protégé par des couches d'acier plus doux et malléable qui agissent comme une enveloppe protectrice des deux côtés du noyau et préviennent également la corrosion.

FINITION DE LA LAME :

La lame présente un superbe motif damassé noir de jais composé de 101 couches aux reflets dorés. La partie supérieure de la lame porte une discrète signature de la forge en caractères kanji, qui se traduit par « Senzo ».

MANCHE :

Le manche japonais traditionnel complète parfaitement la lame. Il est fabriqué en bois stabilisé robuste et possède une mitre très spéciale, fabriquée à partir d'un chêne sacré vieux de 300 ans, dont vous pouvez lire l'histoire ci-dessus. Le manche offre une prise en main agréable et stable et sa forme octogonale convient aussi bien aux droitiers qu'aux gauchers.

☝️ CE COUTEAU PEUT DÉVELOPPER UNE PATINE

Les couteaux fabriqués en aciers au carbone peuvent, en raison de leur faible teneur en chrome (Cr), se décolorer et développer une patine. Le couteau est le plus sensible lorsqu’il est encore neuf et qu’aucune patine ne s’est encore formée, mais plus tard, la patine protégera la lame. Ces types de couteaux nécessitent un peu plus d’entretien :

✔ Essuyez-le régulièrement avec un chiffon propre et sec (vous pouvez également le faire pendant l’utilisation).
✔ Après utilisation, rincez-le à l’eau tiède et essuyez-le.
✔ Enduisez-le régulièrement d’huile d’entretien pour couteaux ou d’huile de tournesol raffinée ordinaire.
✔ Rangez le couteau en l’enveloppant dans du papier, qui absorbera l’humidité et protégera la lame.

La patine est une fine couche qui se forme à la surface de l’acier oxydé et le protège contre une oxydation supplémentaire. Il ne faut pas confondre la patine avec la rouille. La patine protège la lame, tandis que la rouille provoque la corrosion et la détérioration du matériau ; elle doit donc être éliminée (voir les gommes à rouille).

CONSEILS GÉNÉRAUX POUR L’ENTRETIEN DES COUTEAUX :

L’usure de la lame dépend de la qualité de l’acier, de l’utilisation et de l’entretien de la lame. Les couteaux japonais sont fabriqués avec des aciers de haute qualité. Suivez ces conseils pour garder votre couteau japonais en excellent état :

✔ Utilisez une planche à découper en bois, en plastique ou en caoutchouc.
✔ Après utilisation, lavez les couteaux et essuyez-les.
✔ Pour le rangement, utilisez un porte-couteaux ou un étui protecteur pour couteau (saya).
✔ Une bonne technique de découpe est le meilleur moyen de préserver le tranchant plus longtemps.
✔ Utilisez des pierres à aiguiser pour aiguiser le couteau.

❗️Ne laissez pas le couteau dans l’évier. Lavez-le à la main.
❗️Ne lavez pas le couteau au lave-vaisselle.
❗️N’utilisez pas le couteau sur des surfaces en verre, en céramique, en marbre ou en acier.
❗️Ne raclez pas les aliments de la planche à découper avec le tranchant de la lame. Utilisez plutôt le dos du couteau.
❗️Le couteau est un outil destiné à un usage spécifique : couper les aliments. Ce n’est ni un ouvre-boîte, ni un tournevis, ni une truelle, ni un coupe-fil, ni un marteau, etc.

Stunning knife with disappointing cutting performance

Visually this is easily one the most beautiful knives that I own. Fit and finish is great, the blade and handle look amazing.
But unfortunately this knife does not back up it's looks with performance. The blade is so sticky that it is very unpleasant to use. Dicing onions with the knife is borderline dangerous.
Every time I give this knife a chance I notice that I put it down after 3 minutes and grab another knife to finish the cutting job I started.
I really wanted to like this knife and my expectations were very high, as they should be for a 450 euro knife, but unfortunately it just sits in my knife drawer unused because anything else in my collection outperforms it (usually by a lot)...

My holy “Masaki” family tree knife.

My family name, Masaki (正木) roughly means "elegant tree,” derived from masa (正) correct/beginning/great/superior, etc, and ki (木), meaning "tree.” It is no wonder that the purchase of the limited edition Senzo Dawn by Suncraft was an irresistible buy for me. What came was the 101 Layer Black Damascus R2 (SG2) blade with stabilized Oak Wa that incorporated a 300 year old Holy Oak ferrule Gyuto. I was taken aback by the beautiful black Damascus pattern with its golden sheen. The spacer between the stabilized wood and the holy oak merged seamlessly. Even the box it came in was beautiful, complete with the number “065/150.” But looks are not the only thing it has, while doing the paper-cutting test, it passed through it with ease. With its rounded Gyuto cutting profile, rock chopping veggies and slicing meats cover about 90% of my routine kitchen duties. About the only downside I could see was that it doesn’t have a long enough flat cutting profile to chop with at the heel, as it is rounded all the way through the cutting edge. Ironically the choil was not rounded, but this was obviously not a deal-breaker for me. In the end, I felt that the price of this purchase was easily justified because of the quality of materials, the high level of craftsmanship, great design, and together with the basic fact that this is a limited product. Quite a rarity, after all, the people of Japan do not go around cutting down holy trees for profit; such a find is scarce. This is indeed, my holy “Masaki” tree knife, and I quite literally could not resist getting one. Thank you to SharpEdge and Suncraft for working together to bring me this wonderful product.

Refined beauty

The knife is a real masterpiece. A feast for the eyes, as well as for use. The traditional Japanese handle fits wonderfully in the hand. And the blade with a unique damascus pattern is exceptional.
