Le Saji Petty VG-10 Gold RWO 135 mm est un petit couteau de cuisine japonais adapté à la préparation de viandes, poissons et légumes. Cependant, il serait injuste de le qualifier de simple couteau de cuisine, car il s'agit d'un exemple remarquable du savoir-faire du forgeron - de son design unique à ses caractéristiques très spécifiques.

Les couteaux de la série Gold du forgeron Takeshi Saji de la célèbre coopérative Takefu Knife Village tirent leur aspect distinctif d'un processus de laminage spécial où du laiton est ajouté aux couches extérieures pour obtenir un motif damas de couleur or. Mais ce n'est pas qu'une question d'esthétique : Saji a opté pour un acier VG-10 aux propriétés inoxydables et à haute teneur en carbone, ce qui donne une dureté supérieure à 61 HRC, ce qui signifie que le couteau aura un tranchant exceptionnellement fin.

Associé à la magie du maître forgeron, ce couteau est une pièce vraiment spéciale qui ne manquera pas d'impressionner. Un excellent ajout à la collection de tout amateur de couteaux.

FORME DE LA LAME :
Les petits couteaux sont en fait des versions plus petites des couteaux Gyuto (couteaux de chef). Les petits couteaux sont destinés à toutes les petites tâches où les couteaux plus grands sont considérés comme peu maniables. Sur et hors de la planche à découper. Un couteau indispensable dans chaque cuisine, il peut être utilisé pour éplucher, émincer, parer et décorer les aliments.

ACIER:
L'acier VG-10 (V pour Vanadium, G pour « gold » comme dans « gold standard ») est fabriqué par Takefu Special Steel Company, une entreprise sidérurgique relativement petite qui a réussi il y a environ 60 ans à trouver le juste équilibre entre différents éléments pour créer l'acier de fabrication de couteaux japonais le plus populaire aujourd'hui. L'acier VG-10 est un acier inoxydable avec une teneur relativement élevée en carbone (C) (1 %), 15 % en chrome (Cr), 1 % en molybdène (Mo), 0,3 % en vanadium (V) et 1,5 % en cobalt (Co). La combinaison de Cr, Mo et V forme beaucoup de carbures durs, ce qui rend l'acier résistant à l'abrasion, ce qui se traduit par un tranchant lisse et durable.

LAMINAGE:
L'aspect unique de la lame a été obtenu en coinçant le noyau de la lame entre des couches d'acier inoxydable plus doux et résistant à la rouille, auxquelles ont été ajoutés du laiton et du cuivre. Ce style de laminage est également appelé laminage san-mai . Le résultat est un magnifique motif damas aux couleurs de l'arc-en-ciel sombre, d'où ces couteaux tirent leur nom. Il ne s'agit cependant pas seulement d'une caractéristique esthétique, car les couches extérieures améliorent l'intégrité structurelle du couteau et aident à prévenir la casse, ainsi que tout autre dommage tel que la corrosion de la lame.

GÉOMÉTRIE:
Il a une lame à double biseau (symétrique) avec une mouture hamaguri. Le dos et le choil de la lame ne sont pas polis.

FINITION DE LA LAME :
Le magnifique motif damas doré a été obtenu en ajoutant du laiton aux couches protectrices extérieures de la lame, et la lame a été gravée pour créer l'aspect sombre unique de la lame.

POIGNÉE:
Le manche en palissandre de style japonais (Wa) est confortable pour les droitiers et les gauchers, grâce à sa forme octogonale.

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.

Knives made of carbon steels can, due to their low chromium (Cr) content, discolor and develop patina. The knife is the most sensitive when it is still new and a patina had not developed yet, but later, patina will protect the blade.
