Visually this is easily one the most beautiful knives that I own. Fit and finish is great, the blade and handle look amazing.
But unfortunately this knife does not back up it's looks with performance. The blade is so sticky that it is very unpleasant to use. Dicing onions with the knife is borderline dangerous.
Every time I give this knife a chance I notice that I put it down after 3 minutes and grab another knife to finish the cutting job I started.
I really wanted to like this knife and my expectations were very high, as they should be for a 450 euro knife, but unfortunately it just sits in my knife drawer unused because anything else in my collection outperforms it (usually by a lot)...
This is an amazing knife, out of the box sharpness is ridiculous. The knife is thin, light, razor sharp and glides through food. This is the knife I reach for the most in my collection. If someone asks me which knife they should buy, this is the one I recommend.

I’d like to clarify a few points that may help explain the situation.
Most traditional Japanese blacksmiths intentionally do not finish the edge to absolute maximum sharpness at the workshop. This is done so the user can later customize the secondary bevel to their own needs, whether that’s left- or right-handed use or a specific cutting style. It’s a common practice, especially with traditionally made knives.
Regarding your concern that the knife does not match the product images: Higonokami knives are handmade, and some variation in finish, shape, or details can occur from piece to piece. However, I’d like to understand exactly what you’re referring to.

The handle was stunning with this deep red color and fitting service was perfectly done.
Got as a gift from my girlfriend absolute perfection the only thing is a small scathes because of the hand fitting but only this.
It’s like having an antique everything in this knife is like made by blacksmith from period of samurai’s.
My first venture inti Higonokami's and it is just such a great blade to throw in your pocket for when it is needed. Surprised to get Aogami #1 for this price, it sharpens up very well.
I aged the brass handle with vinegar and salt to add a greenish patina and then lacquered it to help preserve the colours.
The delivery was so fast as well and credit to the shop for such a fast turn around.
Just used, great job with my wood cutting board, I recommand this product.

Love this shape, more efficient than a "simple" guyoto. U can chop, slice, rocking motion with this shape of knife. The knife has arrived very sharp, real pleasure to use it.
Can't wait for a steel strix blade, maybe my next buy.

Ich habe Sharp Edge auf Instagram gefunden (es wurde mir vorgeschlagen). Erst war ich skeptisch, aber nachdem Ich mir die Website angeschaut habe war ich begeistert von der Auswahl und Beschreibungen (alles macht einen sehr guten Eindruck) ich habe mich für das „Hayabusa Petty Aogami #2 Regenbogen Damast 150mm“ zu der Zeit sogar noch mit Rabatt, alles lief gut. Ich hatte meinen Name falsch angegeben woraufhin ich den Kundenservice eine Email schrieb, die noch am selben Tag beantwortet wurde! Das ändern meines Namen war kein Problem. Am nächsten Tag erhielt ich eine Email mit Versandbestätigung, Rechnung und Sendungsnummer mit DHL Express, einen Tag danach wäre das Paket angekommen (leider hat DHL es nicht hinbekommen und ich erhielt mein Paket erst 1 Woche später, vor weihnachten bestellt nach Silvester geliefert). Das Messer war sorgfältig verpackt, in einem schönen Karton, mit Pflaster, ein pflege Infoblatt und mit selbst geschriebener Postkarte.
Das Messer ist perfekt und ich werde definitiv nochmal was bestellen!

It’s a common practice in the world of high-end Japanese knives. Another reason is that a very thin edge can get damaged during shipping, which can be fixed with sharpening.
