BLADE (without a handle)
The Hokiyama Petty Ginsanko blade is available without a handle. This is your chance to make your own handle or order it separately so you can put together a one-of-a-kind knife that is perfectly suited to your taste and needs. The knife is also available with an oval handle in magnolia wood.
Hokiyama Petty Nashiji Ginsanko 135mm (5.3") blade length is basically a smaller version of a Gyuto knife (Chef's knife). Petty knives are intended for all those smaller tasks where larger knives are deemed unwieldy, both on and off the cutting board. A must-have knife in every kitchen, it can be used for peeling, mincing, paring and decorating food.
Beautiful and unique hammer dents were left unpolished on the top part of the blade. At the bottom of the blade we can see a very pronounced, curvy line that goes along the entire length of the blade. This is the line between the core and the two softer, outer layers of steel that serve as additional protection of the core steel. Such sandwich of the harder core steel and softer outer steels is called san-mai clad, most of today's Japanese knives are made this way. The heart of this petty is made of Hitachi's Silver III steel, also named Ginsan steel or Ginsanko, which was hardened to around 63 HRC. Due to its high content of Chromium (Cr), Ginsan steel will resist corrosion very well.
Suitable for first-time buyers of a Japanese kitchen knife. It can also serve as a wonderful gift!
Hokiyama Hamono is a leading smithy in Kochi Prefecture in Japan. They have recently celebrated their 100-year anniversary, founded in 1919. Hokiyama Hamono is known for their quality as they follow the tradition of hand-made blades that has been around for over 800 years. They retain the handiwork and traditional craftsmanship that is passed down from generation to generation while striving for the ever-new knowledge and innovation. Despite the fact that they make knives according to the traditional methods, they follow the modern technological guidelines in the field of metallurgy, material processing and innovations in production processes. Hokiyama, in their own words, is a fusion of tradition (土佐 一), innovation (無限) and practicality (左近).
Each knife in the workshop goes through about 50 different processes that are performed and controlled by experienced craftsmen. Among the various steps required to make a Hokiyama knife is a special process called Rolling-Forging. It enables the efficient and uniform production of knives while maintaining the properties and qualities of Japanese steel.

Great customer service, very helpful and eager to fulfil your needs, along with their great passion and love for what they do.
Amazing quality knives, with a great delivery service.
5 Stars in every aspects!!!
I am located in the US. I bought a Yoshida Hamono HAP 40 wide gyuto. The knife performs extremely well. The transaction went smoothly. It was a pleasure to do business with this company.
The knife arrived damaged through the post . I contacted Sharp Edge and Urban was very helpful and sent me a new knife , without any complications. I can't recommend them enough .
very fast delivery
As with all new shops I buy from I like to be careful! Check them out and just be careful even more so when buying something expensive.
So I did my research but decided to side with caution and pay via paypal, I should not have worried !!!
Bought and paid for my knife on Friday morning and it was delivered to the UK on the Monday, how good is that.
The knife is very nice and also one I had been looking for for a while si I am very happy, next time I will pay by bank transfer as I have a Euro balance which helps.
Very nice to deal with and I have been through Slovenia on many occasions so nice to hear they are going Global.

Great Job and thank you so much. Domo arigato gozaimasu!
Thanks for what you are doing, one of a few e-shops in EU with japanese knives.
Fast delivery (on third day it was in Prague/Czech republic)
High level product, delibera on time, very nice and funny packaging!! 😆 Thank you so much!
From the knives that I’ve purchase to the ones I’m currently waiting for are phenomenal. My current daily driver is a Hokiyama 240 wa gyuto with your King 1000 Big Mama stone. Sat there laughing at the description. Currently sold my Sous Chef to get the current knife I’m using, thanks to Urban for helping me out. Looking forward to doing more business with SharpEdge.
I bought HAP-40 santoku Black tokyo night for my husband birthday 🥳!

Great service, delivered internationally as arranged. Would definitely do business with Sharp Edge again!
Yesterday I cooked a Chinese meal for a couple of friends: a main mie dish and verious side dishes. Preparing all the vegetables and meat with this Santoku was a joy: effiortless and precise cutting. Probably this inspired me to be as precise in the cooking itself, because we all agreed that it was the best version of this recipe I ever made.
This is the second knife I purchased from SharpEdges. The first one - a Yoshida kiritsuke 135 mm black HAP-40 is also very good. I like the (almost) minimalistic simple but (almost) perfect finish of these Yoshida blades and handle.
All in all I regret that I did not discover your shop earlier. I already have a nice collection of other Japanese knives with different steels and shapes. No need on the short term for replacements or filling some gap. But who knows?
Delivery by DHL Express from Ljubljana to the Netherlands is okay but not perfect. Oh well. Who cares?
Thanks guys for the good service, the European sense of humour and the - especially that - great products.
Well received and everything in great condition, great knife bag and the blade covers fits perfectly... Thanks
