Il Nakiri Kurosaki della linea Gekko è un'altra lama speciale realizzata dalle mani del talentuoso maestro fabbro Yu Kurosaki. La lama minimalista, leggera e perfettamente bilanciata è sottoposta a un'elevata lucidatura - da qui il nome Gekkō (月光), che in giapponese significa luce lunare. 

Oltre alle sue evidenti caratteristiche impressionanti, questo coltello vanta anche un'anima in un nuovo e rivoluzionario acciaio VG-XEOS (61-62 HRC), dotato di un'eccellente resistenza all'usura e alla corrosione.

FORMA DELLA LAMA:

Il Nakiri è un coltello giapponese realizzato appositamente per preparare verdure ed erbe aromatiche. È uno dei coltelli da cucina più antichi e più utilizzati in Giappone. Il nome Nakiri o Nakiri bōchō significa "tagliatore di foglie" in giapponese. Grazie al suo filo di taglio piatto e alla punta squadrata, la forma del coltello Nakiri consente di tritare e affettare in modo efficiente, rendendolo la scelta più adatta per chef e cuochi casalinghi che preparano quotidianamente grandi quantità di verdure. Il filo dritto della lama garantisce un contatto ottimale e stabile con la superficie di taglio e consente un movimento fluido, offrendo un eccellente controllo della lama e un lavoro preciso.
→ La serie Gekko ha una lama ribassata e leggermente sfalsata rispetto al manico. Il vantaggio di questo design è una maggiore distanza per le nocche, anche se la lama ha una larghezza normale per un coltello gyuto tuttofare.

preparazione delle verdure. La lama misura 160 mm (6.3").

ACCIAIO:

Il VG-XEOS è un acciaio inossidabile di alta qualità prodotto da Takefu Special Steel, nota per acciai come VG-10 e VG-5. È una lega che combina un'elevata resistenza alla corrosione con un'alta durezza e una notevole resistenza all'usura. La durezza della lama è di circa 62 HRC. La fine microstruttura si ottiene mediante uno speciale metodo di fusione che migliora la resistenza all'usura, la robustezza e le proprietà di tempra.

Il VG-XEOS è progettato per utensili da taglio ad alte prestazioni e offre un'eccellente affilatura, una buona tenuta del filo e resistenza alla corrosione.

LAMINAZIONE:

L'acciaio è laminato, ovvero l'anima è realizzata in acciaio molto resistente e ricoperta da uno strato esterno di acciaio inossidabile più morbido - noto anche come rivestimento san-mai.

GEOMETRIA:

Ha una lama a doppio bisello (simmetrica) (50/50). La lama presenta un profilo del filo a V convesso - hamaguri, il che significa che la lama si assottiglia dal dorso fino al filo su entrambi i lati con un angolo uniforme. Questo tipo di affilatura offre un buon equilibrio tra facilità di taglio e robustezza.

FINITURA DELLA LAMA:

La firma kanji incisa a mano è l'unico elemento distintivo di questa lama, altrimenti pulita e altamente lucidata (detta anche migaki) .

MANICO:

La linea Kurosaki Gekko presenta un tradizionale manico in legno di quercia giapponese (Wa) con una forma universale, ottagonale, che si adatta comodamente alle mani sia degli utenti destrimani sia di quelli mancini. L'intero manico è realizzato in un unico pezzo di legno (senza collarino). 

INFORMAZIONI SUL FABBRO:

Yu Kurosaki è un giovane e talentuoso maestro fabbro che vive nel Takefu Knife Village, vicino alla città di Echizen. I suoi coltelli sono noti in tutto il Giappone e nel resto del mondo per il loro design bello e unico e per la qualità superiore. I segni dei colpi di martello sulla lama sono la sua firma, e proprio come i fiocchi di neve, non ce n'è uno uguale all'altro. Inutile dirlo (ma lo diremo comunque): i suoi coltelli non solo hanno un aspetto straordinario, ma sono anche realizzati in acciaio di alta qualità e hanno un filo affilatissimo e duraturo.

Prima di aprire la propria fucina, Kurosaki-san è stato apprendista di Hiroshi Kato, un maestro fabbro con oltre 50 anni di esperienza nella produzione di coltelli. Kato-san è uno dei fondatori del Takefu Knife Village, dove oggi più di 10 maestri fabbri realizzano coltelli a mano e li espongono affinché i visitatori possano ammirarli e conoscere meglio il loro mestiere. Kurosaki-san è il fabbro più giovane ad aver ricevuto il titolo di Master Nokaji dalla Takefu Knife Village Association ed è un insegnante senior presso il villaggio.
