La linea di pietre Cerax è una delle migliori tra le pietre per affilare di fascia media. Stiamo parlando di pietre di media durezza, che creano rapidamente una sospensione durante l'affilatura: i grani risultanti, appena prodotti sulla superficie della pietra, contribuiscono alla velocità con cui i coltelli vengono affilati. Poiché formano questa pasta più velocemente, queste pietre si consumano anche un po' più velocemente durante il processo di affilatura, quindi dovranno essere appiattite più spesso. Non necessitano di essere lasciati a bagno in acqua per lungo tempo e possono essere utilizzati per affilare qualsiasi tipo di acciaio, giapponese e non.

La pietra per affilare combinata Suehiro, grana n. 1000/n. 3000, è un'ottima pietra per l'affilatura domestica. Rimuove il materiale in modo molto efficace, poiché crea rapidamente una pasta durante l'affilatura che aiuta a facilitare il processo. Il prossimo passo è usare Pietra Suehiro Rika #5000 .

Immergere per almeno 10 minuti prima dell'uso. Poiché la pietra si consuma più velocemente, è essenziale un appiattimento regolare . Consigliamo la pietra per affilare diamantata Atoma 140 o la pietra per appiattire Naniwa .

Wears fast

I used the stone to sharpen 3 kitchen knives (Wusthof), 2 kitchen scissors, and a few pocket knives, but the 3000 side wears down so fast! My blades didn't have significant damages nor needed to be reshaped- all I did was sharpen the edge for a few minutes and the whetstone wore down more than a fourth of a centimeter by the end of the first day. I grew up sharpening knives on my parent's diamond whetstone, which doesn't wear almost at all compared to this whetstone!

It also came in chipped at the edge, probably due to the shipping company. I didn't mind any chips as the vast majority of the area of the stone was usable and by the end of the first day I couldn't tell that there were chips (again, due to wear). Overall, pretty good! Would probably need to buy the 3000 grit again by the time that side wears completely down, but sharpening knives for a casual cook is an infrequent endeavor so it won't be for a long while.

Suehiro stones are indeed slightly softer stones compared to same granulation stones for other Japanese manufacturers. Please note that 3000 grit stone is in this case meant as a finishing stone and not much material should be removed from the blade on this step. If you need to remove more material and apply stronger pressure, I would suggest staying a while longer on a 1000 grit stone. Compared to the diamond sharpening stones, whetstones wear out faster.

About the chips on the stone, there would be no problem to let us know about the damaged parcel. We would happily arrange a replacement.
