A nova coleção marcante da marca Masakage e do ferreiro Yoshimi Kato se chama Yuki - neve. A brancura sutil da lâmina e o cabo de magnólia leve foram projetados para lembrar uma paisagem de inverno com neve. Com núcleo de aço carbono e camadas externas de aço inoxidável, esta linha representa a combinação perfeita de beleza e desempenho.
O formato da Ko-Bunka torna-a uma faca multiuso, semelhante à Santoku, e muito fácil de usar. A palavra Bunka em japonês significa cultura e Ko pequeno. A Yuki Ko-Bunka de 135 mm é uma espécie de cruzamento entre uma faca Petty, Nakiri e Mini Santoku. Possui formato característico de Bunka com ponta pronunciada que lembra as lâminas Tanto. A faca provará ser uma faca excelente e versátil, ideal para picar ervas, preparar vegetais e até mesmo cortar pedaços menores de carne. Com seu perfil versátil e visual original, Yuki Ko-Bunka se tornará a estrela do seu arsenal de cozinha.
O acabamento da lâmina é chamado de Nashiji, a tradução literal da palavra é "a casca de uma pêra (asiática)". Refere-se à superfície levemente fosca da parte superior da lâmina, que além de ter valor estético, é prática, pois a superfície irregular reduz a aderência do alimento à lâmina ao fatiar.
O núcleo da faca é de aço Shirogami 2 (Branco 2) , cercado por duas camadas de aço inoxidável que também envolve a lombada da lâmina. A faca é endurecida a 62-63 HRC . A combinação de núcleo de aço carbono e camadas externas de aço inoxidável nos dá o melhor dos dois mundos: fácil manutenção e proteção contra ferrugem, por um lado, e nitidez, borda suave e sedosa e corte e corte eficiente, por outro. Usar a lâmina dará uma pátina na borda inferior da lâmina ao longo da linha shinogi que separa as camadas de aço. Apesar das camadas externas à prova de ferrugem, a faca deve ser limpa com limpeza regular e cuidadosa e recomenda-se a aplicação ocasional de óleo Ballistol .
Yoshimi Kato, um ferreiro relativamente jovem da famosa vila de Takefu, conhecido por muitos ferreiros habilidosos, deu à lâmina um cabo tradicional japonês, de formato oval, feito de madeira de magnólia com um anel feito de vermelho (estabilizado ) madeira.
A faca vem embalada em uma linda caixa - o papel de cor azul natural tem kanji prateado - assinatura do mestre ferreiro. A caixa vem com uma moeda de presente e um certificado carimbado pelo ferreiro e apontador.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:
✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.
❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.

Knives made of carbon steels can, due to their low chromium (Cr) content, discolor and develop patina. The knife is the most sensitive when it is still new and a patina had not developed yet, but later, patina will protect the blade.
