La gamme de pierres Cerax est l'une des meilleures pierres à aiguiser de milieu de gamme. Nous parlons de pierres moyennement dures, qui créent rapidement une boue lors de l'affûtage - les grains résultants, nouvellement produits à la surface de la pierre, contribuent à la rapidité avec laquelle les couteaux sont affûtés. Comme elles forment cette pâte plus rapidement, ces pierres s'usent également un peu plus vite lors du processus d'affûtage, elles devront donc être aplaties plus souvent. Ils n'ont pas besoin d'être trempés longtemps dans l'eau et peuvent être utilisés pour affûter tout type d'acier, japonais ou non.

La pierre à aiguiser combinée Suehiro grain #1000/#3000 est une excellente pierre pour un usage domestique. Il enlève de la matière très efficacement, car il crée rapidement une pâte lors de l'affûtage pour aider, facilitant ainsi le processus. La prochaine étape consiste à utiliser Pierre Suehiro Rika #5000 .

Faire tremper pendant au moins 10 minutes avant utilisation. La pierre s’usant plus vite, un aplatissement régulier est indispensable . Nous recommandons la pierre à aiguiser diamantée Atoma 140 ou la pierre à aplatir Naniwa .

Cette pierre à aiguiser est livrée avec un support de base antidérapant pour un affûtage plus sûr, empêchant la pierre de bouger.

Wears fast

I used the stone to sharpen 3 kitchen knives (Wusthof), 2 kitchen scissors, and a few pocket knives, but the 3000 side wears down so fast! My blades didn't have significant damages nor needed to be reshaped- all I did was sharpen the edge for a few minutes and the whetstone wore down more than a fourth of a centimeter by the end of the first day. I grew up sharpening knives on my parent's diamond whetstone, which doesn't wear almost at all compared to this whetstone!

It also came in chipped at the edge, probably due to the shipping company. I didn't mind any chips as the vast majority of the area of the stone was usable and by the end of the first day I couldn't tell that there were chips (again, due to wear). Overall, pretty good! Would probably need to buy the 3000 grit again by the time that side wears completely down, but sharpening knives for a casual cook is an infrequent endeavor so it won't be for a long while.

Suehiro stones are indeed slightly softer stones compared to same granulation stones for other Japanese manufacturers. Please note that 3000 grit stone is in this case meant as a finishing stone and not much material should be removed from the blade on this step. If you need to remove more material and apply stronger pressure, I would suggest staying a while longer on a 1000 grit stone. Compared to the diamond sharpening stones, whetstones wear out faster.

About the chips on the stone, there would be no problem to let us know about the damaged parcel. We would happily arrange a replacement.
