Damascus Santoku Black apresenta um cabo de estilo ocidental (Yo) em madeira pakka preta. Esta faca será um ótimo complemento para a sua cozinha, adequada para cortar vegetais, carne e peixe. O ferreiro Masutani é conhecido como um afiador de facas incrivelmente bom, e suas facas não são diferentes. Com sua lombada muito fina (cerca de 1,8 mm), essas facas deslizam facilmente pelos alimentos.

O núcleo deste Santoku é feito de aço inoxidável VG-1, um primo mais novo do aço VG-10 mais difundido, e revestido em 5 camadas de aço mais macio, o que dá à faca um lindo padrão de Damasco (aquelas linhas curvas que parecem como os anéis de crescimento de uma árvore). Comparado ao VG-10, o VG-1 é um aço um pouco mais resistente, mas com um pouco menos de resistência ao desgaste. Devido a uma moagem muito fina, o aço VG-1 fica exposto na parte inferior da lâmina (a linha curva semelhante a um hamon). Esta faca foi forjada com uma dureza de cerca de 60 HRC, o que oferece uma retenção satisfatória do fio e é fácil de afiar.

Este Santoku foi equipado com um cabo estilo yo, tipo ocidental, feito de madeira pakka preta durável. Ele também possui um suporte de aço inoxidável para uma pegada mais confortável e uma transição mais suave do cabo para a lâmina. A espiga da faca termina na metade do cabo, reduzindo ainda mais o peso da faca e empurrando o equilíbrio mais para a ponta da lâmina, como acontece com os cabos tradicionais japoneses no estilo wa. O cabo cabe bem em suas mãos tanto para o martelo quanto para o punho.

No geral, as facas do Sr. Masutani oferecem uma relação preço-desempenho impressionante. São uma ótima opção para cozinheiros domésticos apaixonados que estão começando a explorar o belo mundo das facas japonesas. Essas facas caberão bem nas mãos de estudantes de chef e também serão um ótimo presente (só não se esqueça de adicionar uma moeda ao seu presente ).

☝️ Curiosidades extras: A vila de Etsu refere-se à "vila" de quatro cidades japonesas, Fukui, Ishikawa, Toyama e Niigata, conhecidas por sua história na fabricação de facas. Uma tradução aproximada de "Etsu" em japonês significa felicidade, ou melhor, auto-satisfação.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.

Knives made of carbon steels can, due to their low chromium (Cr) content, discolor and develop patina. The knife is the most sensitive when it is still new and a patina had not developed yet, but later, patina will protect the blade.
