Kawamura Mizu-Honyaki Gyuto es un cuchillo forjado a mano con una precisión increíble que proviene de siglos de experiencia y conocimiento. Es una combinación de una excelente herramienta de trabajo y obra de arte. La hoja honyaki está forjada a partir de una sola pieza de acero blanco Yasuki #2 de alto carbono.

Cuchillos Honyaki

Honyaki significa literalmente “verdaderamente templado” y este método de forja refleja, en su forma más pura, el arte tradicional japonés de la fabricación de espadas. Estos cuchillos son extremadamente exigentes de forjar y moldear, por lo que solo los mejores artesanos los fabrican. Siendo excepcionalmente raros, caros y delicados, son adecuados solo para chefs con mucha experiencia. Son muy apreciados debido a su kirenaga o capacidad de retención del filo, manteniendo la nitidez durante mucho tiempo.

Estos cuchillos necesitan un proceso diferente de endurecimiento. Después de forjar la hoja y darle un primer desbaste, se aplica una mezcla especial de arcilla, carbón, piedra de afilar natural y agua en un patrón específico. Luego, el cuchillo se enfría rápidamente en agua (esa es la parte del proceso donde la katana adquiere su icónica forma curva). La parte de la hoja que no estaba cubierta con arcilla se endurece, mientras que la parte cubierta se enfría más lentamente y no se endurece tanto. El resultado es una hoja hecha de una aleación que tiene dos estructuras cristalinas diferentes. La línea de fase entre estas dos estructuras se llama hamon. Se requiere mucha experiencia, conocimiento y equipo para "resaltar" el hamon. El método de forja honyaki permite que el hamon – una línea de temple elegante que define claramente la zona de transición entre un filo duro y un lomo blando – se forme durante el templado.

En este caso, la línea hamon única toma la forma sutil del Monte Fuji con un amanecer lunar – en un lado, la luna está llena, en el otro, solo su creciente se perfila contra la superficie plateada de la hoja. El Monte Fuji es considerado un símbolo sagrado de Japón y ha sido reproducido innumerables veces en el arte japonés.

El aspecto altamente pulido de la hoja es el resultado de un proceso muy único y que consume mucho tiempo para pulir la hoja. El recubrimiento protector que previene la corrosión le da al cuchillo un brillo iridiscente y multicolor.

Gyuto es la forma de hoja más versátil y útil en la cocina moderna. Tiene un perfil ancho para facilitar la transferencia de alimentos y tiende a ser bastante plano hacia el talón, permitiendo un corte fácil y rápido sobre la tabla de cortar. Una punta afilada permite perforar y realizar trabajos precisos y delicados. Una ligera curva entre la punta y la sección media hace que el vientre sea ideal para balancear la hoja hacia adelante y hacia atrás al cortar. Puede usarse para cortar carne, pescado y verduras.

Es un Gyuto ligeramente más pesado, ya que la hoja en el mango es más gruesa (3.8 mm) y luego se estrecha gradualmente hacia la punta (1.8 mm). Debido a su grosor, la hoja puede afilarse con un doble bisel que tiene un bisel secundario que no es cóncavo sino convexo. Este tipo de bisel se llama hamaguri o “concha de almeja” y está inspirado en la katana. Permite una nitidez superior que requiere un manejo delicado y ayuda a evitar que los alimentos se peguen a la hoja.

La longitud del filo es de 230 mm (del talón a la punta), pero con este cuchillo la longitud se mide desde el borde del mango hasta la punta de la hoja, sumando 240 mm.

El cuchillo se complementa con el tradicional mango japonés octogonal que es ligero y se ajusta cómodamente a la mano tanto de usuarios diestros como zurdos. Está hecho de ébano oscuro y cuenta con una guarda hecha de cuerno de búfalo de agua. El cuchillo viene con una saya o funda hecha de madera de magnolia que puede usarse para proteger el cuchillo cuando no está en uso.

El cuchillo fue fabricado por el herrero Nakagawa-san en la herrería Shiraki Hamono en la ciudad de Sakai, uno de los centros de la artesanía japonesa de forja.

⚠️ Los cuchillos de acero al carbono son delicados y requieren cuidados especiales. Además de un uso cuidadoso que prolongará su filo, la hoja debe limpiarse cuidadosamente después de cada uso y secarse con un paño para prevenir la corrosión. Si corta verduras o frutas que contienen grandes cantidades de ácido, sugerimos que limpie la hoja incluso mientras corta. Después de terminar de preparar los alimentos, recomendamos usar aceite para el mantenimiento de la hoja y proteger su superficie de la corrosión. La hoja delgada y afilada está destinada para trabajos precisos y no es adecuada para cortar huesos, alimentos congelados u otros alimentos con corteza o cáscara dura.
