Quando se é um colecionador apaixonado de facas, começa-se a valorizar a história por trás de cada lâmina. E, meu amigo, esta faca tem uma história para contar.

Há mais de 300 anos, um carvalho no Santuário Kifune, no Japão, começou a estender-se para o céu com os seus ramos jovens e ainda frágeis. Com o passar das décadas, esses ramos cresceram e tornaram-se fortes, e o pequeno carvalho tornou-se numa árvore grande e robusta. Com a sua copa densa e vibrante, acenava aos visitantes do santuário a cada rajada de vento e protegia-os do sol escaldante com a sua sombra. Tornou-se uma peça vital do Santuário Kifune. Uma árvore sagrada. Parte da divindade familiar do fundador da forja Suncraft.

Mas em 2019, ocorreu um desastre. Um tufão atingiu a cidade de Seki, no Japão, e o poderoso carvalho sagrado caiu.

A forja Suncraft quis dar-lhe uma nova vida. Com a bênção do sacerdote, transformaram-no numa parte de algo novo, para que pudesse continuar a sua missão de ajudar as pessoas. A madeira do carvalho sagrado foi usada para as cabos das melhores facas da Suncraft. E assim nasceu a linha Senzo Dawn Edição Limitada.

A faca Senzo Dawn Edição Limitada Gyuto SG2 200mm (7,9") é uma faca japonesa multiusos, fabricada na forja japonesa Suncraft. A lâmina é forjada com um método comum de camadas “sanduíche” chamado san-mai; o núcleo em aço em pó SG2 é envolvido por camadas de aço mais macio, criando um deslumbrante padrão damasco negro com um brilho dourado. A faca é endurecida até cerca de 62-63 HRC, o que significa que manterá o fio durante muito tempo. A composição e a microestrutura do aço proporcionam uma afiação extremamente fina e suave. A faca tem um cabo tradicional japonês octogonal feito de madeira estabilizada, coroado com uma virola especial feita da madeira de um carvalho sagrado com 300 anos.

A faca é um deslumbrante objeto de coleção e vem numa bonita caixa tradicional japonesa de madeira de paulownia, que é incrivelmente leve e resistente.

FORMA DA LÂMINA:
Gyuto é a forma de lâmina mais versátil e útil na cozinha moderna. Tem um perfil largo para facilitar a transferência dos alimentos e tende a ser bastante plana perto do calcanhar, permitindo um corte fácil e rápido na tábua. A ponta afiada permite perfurar e realizar trabalhos precisos e delicados. Uma ligeira curva entre a ponta e a parte central torna o ventre ideal para balançar a lâmina para a frente e para trás ao cortar. Pode ser usada para cortar carne, peixe e legumes.

AÇO:
O aço SG2 é um aço em pó, conhecido pela sua dureza e consequente retenção do fio — devido a um elevado teor de carbono (C) de 1,5%. O aço também é rico em crómio (Cr) — cerca de 15%, o que aumenta a resistência à corrosão, e molibdénio (Mo), que melhora a resistência ao desgaste da lâmina. As lâminas em aço SG2 conseguem uma afiação fina devido à microestrutura fina do aço e mantêm-na — sem preocupações com manutenção e corrosão.

GEOMETRIA:
A lâmina é afiada em ambos os lados (numa proporção de 50/50), pelo que tem uma geometria de bisel duplo com perfil plano e pode ser usada tanto por destros como por canhotos.

LAMINAÇÃO:
A lâmina é fabricada com a técnica san-mai. O núcleo em aço em pó SG2 é protegido por camadas de aço mais macio e maleável que atuam como uma capa protetora em ambos os lados do núcleo e também previnem a corrosão.

ACABAMENTO DA LÂMINA:
A lâmina apresenta um deslumbrante padrão damasco negro com 101 camadas e um brilho dourado. A parte superior da lâmina ostenta uma assinatura subtil da forja em caracteres kanji que se traduzem por “Senzo”.

CABO:
O cabo tradicional japonês complementa muito bem a lâmina. O cabo é feito de madeira estabilizada resistente e tem uma virola muito especial, feita da madeira de um carvalho sagrado com 300 anos, cuja história pode ler acima. O cabo oferece uma pega agradável e estável e é octogonal, pelo que é adequado para destros e canhotos.

Stunning knife with disappointing cutting performance

Visually this is easily one the most beautiful knives that I own. Fit and finish is great, the blade and handle look amazing.
But unfortunately this knife does not back up it's looks with performance. The blade is so sticky that it is very unpleasant to use. Dicing onions with the knife is borderline dangerous.
Every time I give this knife a chance I notice that I put it down after 3 minutes and grab another knife to finish the cutting job I started.
I really wanted to like this knife and my expectations were very high, as they should be for a 450 euro knife, but unfortunately it just sits in my knife drawer unused because anything else in my collection outperforms it (usually by a lot)...

My holy “Masaki” family tree knife.

My family name, Masaki (正木) roughly means "elegant tree,” derived from masa (正) correct/beginning/great/superior, etc, and ki (木), meaning "tree.” It is no wonder that the purchase of the limited edition Senzo Dawn by Suncraft was an irresistible buy for me. What came was the 101 Layer Black Damascus R2 (SG2) blade with stabilized Oak Wa that incorporated a 300 year old Holy Oak ferrule Gyuto. I was taken aback by the beautiful black Damascus pattern with its golden sheen. The spacer between the stabilized wood and the holy oak merged seamlessly. Even the box it came in was beautiful, complete with the number “065/150.” But looks are not the only thing it has, while doing the paper-cutting test, it passed through it with ease. With its rounded Gyuto cutting profile, rock chopping veggies and slicing meats cover about 90% of my routine kitchen duties. About the only downside I could see was that it doesn’t have a long enough flat cutting profile to chop with at the heel, as it is rounded all the way through the cutting edge. Ironically the choil was not rounded, but this was obviously not a deal-breaker for me. In the end, I felt that the price of this purchase was easily justified because of the quality of materials, the high level of craftsmanship, great design, and together with the basic fact that this is a limited product. Quite a rarity, after all, the people of Japan do not go around cutting down holy trees for profit; such a find is scarce. This is indeed, my holy “Masaki” tree knife, and I quite literally could not resist getting one. Thank you to SharpEdge and Suncraft for working together to bring me this wonderful product.

I`m a great fan oft he R2 powder steel, using 2 of the Takamura R2 for daily use cutting fruits and vegetables.
The Senzo is a little bit heavier, about 10 grams. It has a nice dark damascus pattern and the build quality is excellent including the handle.
It comes sharp out oft he box. I did a few strikes on my leather strope and tried the first cuts.
Excellent sharpness, slipping through tomatoes, apples, potatoes and onions without any effort.
That´s what I expected.
What I noticed when I went up to clean the knife is, that the outside of the knife with the damascus pattern is very rough. So it´s not as easy to dry the Senzo compared to a knife with a polished blade.
It looks really great, so I don´t know if I take it for daily use or give him a nice place in my glass cabinet and enjoy the sight every day.
