Kurosaki Nakiri de la línea Gekko es otra espada especial de manos del talentoso maestro herrero Yu Kurosaki. La hoja minimalista, liviana y perfectamente equilibrada está tratada con un alto pulido, de ahí el nombre Gekkō (月光), que significa luz de luna en japonés. 

El secreto de este cuchillo radica en un nuevo acero VG-XEOS, que tiene una excelente resistencia al desgaste y a la corrosión. Este es un cuchillo que será apreciado en manos de un cocinero de preparación con montañas de verduras que preparar cada día.

FORMA DE LA CUCHILLA:
El Nakiri está hecho para un propósito: picar verduras. Si preparas y cocinas muchas verduras, pero ya tienes un cuchillo para cortar carne/pescado, un cuchillo nakiri es una excelente opción para tus necesidades. Recientemente, muchos nakiris han encontrado su lugar en las cocinas de los hogares: es un cuchillo perfecto para vegetarianos y amantes de las verduras. La cuchilla mide 165 mm (6.5" ).

MANEJAR:
La línea Kurosaki Gekko presenta un mango de madera de roble japonés tradicional (Wa) con una forma octagonal universal que se adapta cómodamente a las manos de usuarios diestros y zurdos. Todo el mango está hecho de una sola pieza de madera (sin férula).

ACERO:
VG-XEOS es un acero inoxidable de alta calidad producido por Takefu Special Steel, conocido por aceros como VG-10 y VG-5. Es una aleación que combina una fuerte resistencia a la corrosión con alta dureza y durabilidad al desgaste. La dureza de la hoja es de aproximadamente 62 HRC. La fina microestructura se logra a través de un método de fusión especial que mejora la resistencia al desgaste, la resistencia y las propiedades de temple.

VG-XEOS está diseñado para herramientas de corte de alto rendimiento, ofreciendo una excelente nitidez, buena retención del filo y resistencia a la corrosión.

LAMINACIÓN:
El acero está laminado, lo que significa que el núcleo está hecho de un acero muy fuerte cubierto con una capa externa de acero inoxidable más blando − también conocido como san-mai vestido.

GEOMETRÍA:
Tiene una hoja de doble bisel (simétrica) (50/50). La hoja está afilada de forma convexa.

ACABADO DE LA HOJA:
La firma en kanji tallada a mano es el único elemento distintivo en esta hoja, que de otro modo es limpia y altamente pulida (también llamada migaki).

HERRERO:
Yu Kurosaki es un talentoso maestro herrero que vive en Takefu Knife Village, cerca de la ciudad de Echizen. Sus cuchillos son bien conocidos en todo Japón y también en todo el mundo por su hermoso diseño único y su calidad superior. Las abolladuras de Hammer en la hoja son su acabado característico y, al igual que con los copos de nieve, ninguna abolladura es igual. No hace falta decirlo (pero lo diremos de todos modos) que sus cuchillos no solo tienen un aspecto fantástico, sino que también están hechos de acero de alta calidad y tienen un filo duradero y afilado como una navaja.

Antes de abrir su propio taller, Kurosaki-san fue aprendiz de Hiroshi Kato, un maestro herrero con más de 50 años de experiencia en la fabricación de cuchillos. Kato-san es uno de los fundadores de Takefu Knife Village, donde ahora más de 10 maestros herreros fabrican cuchillos a mano y los exhiben para que los visitantes los admiren y aprendan más sobre su oficio. Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.

Knives made of carbon steels can, due to their low chromium (Cr) content, discolor and develop patina. The knife is the most sensitive when it is still new and a patina had not developed yet, but later, patina will protect the blade.
