This limited edition SG2 Bunka Matte Ebony Blond Buffalo 200mm (7.9") blade length is a multi-purpose kitchen knife, handmade by Japanese knifemaker Suncraft in the famous knife city Seki in Gifu prefecture. Suncraft made this Bunka exclusively for us! It will serve well to all those knife lovers who prefer a slightly longer blade - it helps when cutting larger vegetables and steaks, as well as for filleting bigger fish.
The slim blade profile (1.8mm) and hard powder Japanese steel provide a winning combination of smooth and long-lasting sharpness, precise cutting and comfortable and fast work. We love the geometry and the slim profile, so we recommend it to all cooks, regardless if you are a professional chef or a passionate home cook!
BLADE SHAPE:
The shape of the blade is called Bunka which means culture in Japanese. Bunka makes for a highly versatile knife suitable for cutting vegetables, meat, and fish. The blade is wide and flat at the handle, has a softly curved belly of the blade, suitable for both long and short cuts, and a pointy reverse tanto tip for precise cuts and carvings. The angle of the spine rapidly changes to meet the tip which is referred to as a »K-Tip«. Besides looking badass, this shape allows the user precision and makes getting to the hard-to-get-places a bit easier.
STEEL AND LAMINATION:
SG2 Bunka Matte is forged by Japanese knifemaker Suncraft in the famous knife city Seki in Gifu prefecture. Forged with a common “sandwich” method called san-mai with the core steel made of SG2 powder steel, one of the best stainless steels. The knife was hardened to around 62-63 HRC, which means it will stay sharp for a very, very long time. The composition and microstructure of the steel provide extremely fine and smooth sharpness.
BLADE FINISH:
This bunka features a matte, unpolished finish with a very pronounced line at the bottom of the blade. This line indicates the border between the two softer, outer layers of steel, and the strong SG2 core steel, seen exposed at the very edge of the blade.
HANDLE:
This knife features a traditional octagonal Japanese handle made from ebony with a light buffalo horn ferrule. Its universal octagonal shape is suitable for both right- and left-handed users, providing an excellent grip for easy and comfortable knife handling.
We also made a custom-fit saya (knife sheath) for our SG2 Bunka Matte 200mm. → Saya is not included in the price, but we really recommend ordering it together with a knife as it will protect the blade and its user from damages and injuries and keep the knife sharp and make it easier to carry around. Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:
✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.
❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
