Kawamura Mizu-Honyaki Gyuto é uma faca forjada à mão com uma precisão incrível que resulta de séculos de experiência e conhecimento. É uma combinação de uma excelente ferramenta de trabalho e obra de arte. A lâmina honyaki é forjada a partir de uma única peça de aço branco Yasuki #2 de alto carbono.

Facas Honyaki

Honyaki significa literalmente “verdadeiramente forjado” e este método de forjamento reflete, na sua forma mais pura, a arte tradicional japonesa da fabricação de espadas. Estas facas são extremamente exigentes para forjar e moldar, por isso apenas os melhores artesãos as fazem. Sendo excepcionalmente raras, caras e delicadas, são adequadas apenas para chefs altamente experientes. São muito apreciadas devido às suas capacidades de kirenaga ou retenção de fio, mantendo a afiação por muito tempo.

Estas facas necessitam de um processo diferente de endurecimento. Depois da lâmina ser forjada e grosseiramente moída, uma mistura especial de argila, carvão, pedra de afiar natural e água é aplicada na lâmina num padrão específico. A faca é então temperada em água (essa é a parte do processo onde a katana obtém a sua forma curva icónica). A parte da faca que não foi coberta com argila endurece, enquanto a parte coberta arrefece mais lentamente e não endurece tanto. O resultado é uma lâmina feita de uma única liga que tem duas estruturas cristalinas diferentes. A linha de fase entre as duas estruturas diferentes é chamada hamon. É necessário muita experiência, conhecimento e equipamento para “destacar” o hamon. O método de forjamento honyaki permite que o hamon – uma linha de têmpera graciosa que define claramente a zona de transição entre uma aresta dura e um dorso macio – se forme durante o tempero.

Neste caso, a linha única do hamon assume a forma subtil do Monte Fuji com um nascer da lua – de um lado, a lua está cheia, do outro, apenas o seu crescente está silhuetado contra a superfície prateada da lâmina. O Monte Fuji é considerado um símbolo sagrado do Japão e tem sido reproduzido inúmeras vezes na arte japonesa.

A aparência altamente polida da lâmina é o resultado de um processo muito único e demorado de polimento da lâmina. A camada protetora que previne a corrosão confere à faca um brilho iridescente e multicolorido.

Gyuto é a forma de lâmina mais versátil e útil na cozinha moderna. Tem um perfil largo para facilitar a transferência dos alimentos e tende a ser bastante plana em direção ao calcanhar, permitindo corte fácil e rápido na tábua de cortar. Uma ponta afiada permite perfuração e trabalho preciso e delicado. Uma ligeira curva entre a ponta e a secção média torna o ventre excelente para balançar a lâmina para a frente e para trás ao cortar. Pode ser usada para cortar carne, peixe e legumes.

É um Gyuto ligeiramente mais pesado, pois a lâmina junto ao cabo é mais espessa (3,8 mm) e depois afina gradualmente em direção à ponta (1,8 mm). Devido à sua espessura, a lâmina pode ser afiada com um bisel duplo com um bisel secundário que não é côncavo, mas sim convexo. Este tipo de afiação é chamado hamaguri ou “concha de amêijoa” e é inspirado na katana. Permite uma afiação superior que requer manuseio delicado e ajuda a evitar que os alimentos grudem na lâmina.

O comprimento do fio de corte é de 230mm (do calcanhar à ponta), mas com esta faca o comprimento é medido desde a extremidade do cabo até à ponta da lâmina, totalizando 240mm.

A faca é complementada pelo tradicional cabo japonês octogonal que é leve e encaixa confortavelmente na mão de utilizadores destros e canhotos. É feito de ébano escuro e apresenta um reforço feito de chifre de búfalo de água. A faca vem com uma saya ou bainha feita de madeira de magnólia que pode ser usada para proteger a faca quando não está em uso.

A faca foi feita pelo ferreiro Nakagawa-san na oficina Shiraki Hamono na cidade de Sakai, um dos centros do artesanato japonês de forjamento.

⚠️ Facas de aço carbono são delicadas e requerem cuidados especiais. Para além do uso cuidadoso que prolonga a sua afiação, a lâmina deve ser cuidadosamente limpa após cada uso e limpa com um pano seco para prevenir corrosão. Se cortar legumes ou frutas que contenham grandes quantidades de ácido, sugerimos que limpe a lâmina mesmo durante o corte. Depois de terminar de preparar os alimentos, recomendamos o uso de óleo para manutenção da lâmina para proteger a superfície da lâmina da corrosão. A lâmina fina e afiada destina-se a trabalhos precisos e não é adequada para cortar ossos, alimentos congelados e outros alimentos com crosta ou casca dura.
