El Gyuto Mizu-Honyaki de Kawamura es un cuchillo forjado a mano con una precisión increíble, fruto de siglos de experiencia y conocimientos. Es una combinación de una excelente herramienta de trabajo y obra de arte. La hoja honyaki está forjada a partir de una sola pieza de acero blanco Yasuki n.º 2 con alto contenido de carbono.

Cuchillos honyaki

Honyaki significa literalmente «forjado al fuego verdadero» y este método de forja refleja, en su forma más pura, el arte tradicional japonés de fabricar espadas. Estos cuchillos son extremadamente exigentes de forjar y dar forma, por lo que solo los elaboran los mejores artesanos. Al ser excepcionalmente raros, caros y delicados, solo son adecuados para chefs con mucha experiencia. Son muy apreciados por su kirenaga o capacidad de retención del filo, ya que mantienen el afilado durante mucho tiempo.

Estos cuchillos requieren un proceso de templado diferente. Después de forjar y desbastar la hoja, se aplica sobre ella una mezcla especial de arcilla, carbón vegetal, piedra de afilar natural y agua siguiendo un patrón específico. A continuación, el cuchillo se templa en agua (esa es la parte del proceso en la que la katana adquiere su icónica forma curva). La parte del cuchillo que no estaba cubierta de arcilla se endurece, mientras que la parte cubierta se enfría más lentamente y no se endurece tanto. El resultado es una hoja fabricada con una sola aleación que presenta dos estructuras cristalinas diferentes. La línea de separación entre ambas estructuras se denomina hamon. Hacer que el hamon «resalte» requiere mucha experiencia, conocimientos y equipamiento. El método de forja honyaki permite que el hamon -una elegante línea de templado que define claramente la zona de transición entre un filo duro y un lomo blando- se forme durante el templado.

En este caso, la singular línea del hamon adopta la sutil forma del monte Fuji con una salida de luna: en un lado, la luna está llena; en el otro, solo su cuarto creciente se recorta sobre la superficie plateada de la hoja. El monte Fuji se considera un símbolo sagrado de Japón y ha sido reproducido innumerables veces en el arte japonés.

El aspecto altamente pulido de la hoja es el resultado de un proceso muy particular y laborioso de pulido. El revestimiento protector que evita la corrosión proporciona al cuchillo un brillo iridiscente, similar al del arcoíris.

El Gyuto es la forma de hoja más versátil y útil de la cocina moderna. Tiene un perfil ancho para transferir los alimentos con facilidad y tiende a ser bastante plano hacia el talón, lo que permite picar de forma fácil y rápida sobre la tabla de cortar. La punta afilada permite perforar y realizar trabajos precisos y delicados. Una ligera curva entre la punta y la sección central hace que la panza sea ideal para balancear la hoja hacia delante y hacia atrás al cortar. Puede utilizarse para cortar carne, pescado y verduras.

Es un Gyuto ligeramente más pesado, ya que la hoja es más gruesa en la zona del mango (3,8 mm) y se estrecha gradualmente hacia la punta (1,8 mm). Debido a su grosor, la hoja puede afilarse con un bisel doble y un bisel secundario que no es cóncavo, sino convexo. Este tipo de afilado se denomina hamaguri o «concha» y está inspirado en la katana. Permite obtener un filo superior que requiere un manejo delicado y ayuda a evitar que los alimentos se adhieran a la hoja.

La longitud del filo es de 230 mm (del talón a la punta), pero en este cuchillo la longitud se mide desde el borde del mango hasta la punta de la hoja, lo que da un total de 240 mm.

El cuchillo se completa con el tradicional mango octogonal japonés, ligero y cómodo, que se adapta a la mano tanto de usuarios diestros como zurdos. Está fabricado en ébano oscuro y cuenta con un refuerzo de cuerno de búfalo de agua. El cuchillo incluye una saya o funda fabricada en madera de magnolia, que puede utilizarse para protegerlo cuando no está en uso.

El cuchillo fue fabricado por el herrero Nakagawa-san en la forja Shiraki Hamono, en la ciudad de Sakai, uno de los centros de la tradición japonesa de la forja.

⚠️ Los cuchillos de acero al carbono son delicados y requieren cuidados especiales. Además de utilizarlo con cuidado para prolongar su afilado, la hoja debe limpiarse cuidadosamente después de cada uso y secarse con un paño seco para evitar la corrosión. Si corta verduras o frutas con grandes cantidades de ácido, recomendamos limpiar la hoja incluso mientras corta. Después de terminar de preparar los alimentos, recomendamos utilizar aceite para el mantenimiento de la hoja y proteger su superficie contra la corrosión. La hoja fina y afilada está diseñada para trabajos precisos y no es adecuada para cortar huesos, alimentos congelados ni otros alimentos con una corteza o cáscara dura.
