É uma combinação de uma excelente ferramenta de trabalho e obra de arte. A lâmina honyaki é forjada a partir de uma única peça de aço branco Yasuki de alto teor de carbono #2.

Facas Honyaki

Honyaki significa literalmente «forjada ao fogo» e este método de forjamento reflete, na sua forma mais pura, a arte tradicional japonesa de fabricar espadas. Estas facas são extremamente exigentes de forjar e moldar, pelo que apenas os melhores artesãos as produzem. Sendo excecionalmente raras, dispendiosas e delicadas, são adequadas apenas para chefs altamente experientes. São muito apreciadas devido à sua kirenaga ou capacidade de retenção do fio, mantendo-se afiadas durante muito tempo.

Estas facas requerem um processo de endurecimento diferente. Depois de a lâmina ser forjada e desbastada, aplica-se uma mistura especial de argila, carvão, pedra de afiar natural e água à lâmina, segundo um padrão específico. A faca é então temperada em água (é nesta parte do processo que a katana adquire a sua icónica curvatura). A parte da faca que não foi coberta de argila endurece, enquanto a parte coberta arrefece mais lentamente e não endurece tanto. O resultado é uma lâmina feita de uma única liga, com duas estruturas cristalinas diferentes. A linha de transição entre as duas estruturas chama-se hamon. É necessária muita experiência, conhecimento e equipamento para fazer o hamon «saltar à vista». O método de forjamento honyaki permite que o hamon - uma elegante linha de têmpera que define claramente a zona de transição entre um fio duro e um dorso macio - se forme durante a têmpera.

Neste caso, a linha hamon única assume a forma subtil do Monte Fuji com um nascer da lua - de um lado, a lua está cheia; do outro, apenas o seu crescente se recorta contra a superfície prateada da lâmina. O Monte Fuji é considerado um símbolo sagrado do Japão e foi reproduzido inúmeras vezes na arte japonesa.

O aspeto altamente polido da lâmina resulta de um processo muito singular e demorado de polimento. O revestimento protetor que evita a corrosão confere à faca um brilho iridescente, semelhante a um arco-íris.

Gyuto é o formato de lâmina mais versátil e útil da cozinha moderna. Tem um perfil largo para transferir facilmente os alimentos e tende a ser bastante plano junto ao calcanhar, permitindo picar fácil e rapidamente na tábua. A ponta afiada permite perfurar e realizar trabalhos delicados e precisos. Uma ligeira curvatura entre a ponta e a secção central torna a barriga ideal para balançar a lâmina para a frente e para trás ao cortar. Pode ser utilizada para cortar carne, peixe e legumes.

É um Gyuto ligeiramente mais pesado, uma vez que a lâmina é mais espessa junto ao cabo (3,8 mm) e vai afunilando gradualmente em direção à ponta (1,8 mm). Devido à sua espessura, a lâmina pode ser afiada com um bisel duplo e um bisel secundário que não é côncavo, mas sim convexo. Este tipo de desbaste chama-se hamaguri ou «concha» e é inspirado na katana. Permite obter uma nitidez superior, requer um manuseamento delicado e ajuda a evitar que os alimentos fiquem colados à lâmina.

O comprimento do fio de corte é de 230 mm (do calcanhar à ponta), mas, nesta faca, o comprimento é medido desde a extremidade do cabo até à ponta da lâmina, totalizando 240 mm.

A faca é complementada pelo tradicional cabo octogonal japonês, leve e confortável para a mão, tanto de utilizadores destros como esquerdinos. É feito de ébano escuro e inclui um reforço de chifre de búfalo-de-água. A faca inclui uma saya ou bainha feita de madeira de magnólia, que pode ser utilizada para proteger a faca quando esta não está a ser usada.

A faca foi produzida pelo ferreiro Nakagawa-san na forja Shiraki Hamono, na cidade de Sakai, um dos centros da tradição japonesa de forjamento.

⚠️ As facas de aço-carbono são delicadas e requerem cuidados especiais. Além de uma utilização cuidadosa, que prolongará a retenção do fio, a lâmina deve ser cuidadosamente limpa após cada utilização e enxugada com um pano seco para evitar a corrosão. Se cortar legumes ou frutas que contenham grandes quantidades de ácido, recomendamos que limpe a lâmina mesmo durante o corte. Depois de terminar a preparação dos alimentos, recomendamos a utilização de óleo para a manutenção da lâmina, de modo a proteger a sua superfície contra a corrosão. A lâmina fina e afiada destina-se a trabalhos de precisão e não é adequada para cortar ossos, alimentos congelados ou outros alimentos com uma crosta ou casca dura.
