El Nakiri Kurosaki de la línea Gekko es otra hoja especial salida de las manos del talentoso maestro herrero Yu Kurosaki. La hoja minimalista, ligera y perfectamente equilibrada está tratada con un pulido intenso, de ahí el nombre Gekkō (月光), que significa luz de luna en japonés. 

Además de sus impresionantes características, este cuchillo también cuenta con un núcleo de acero revolucionario VG-XEOS (61-62 HRC), que ofrece una excelente resistencia al desgaste y la corrosión.

FORMA DE LA HOJA:

El Nakiri es un cuchillo japonés diseñado específicamente para preparar verduras y hierbas aromáticas. Es uno de los cuchillos de cocina más antiguos y utilizados de Japón. El nombre Nakiri o Nakiri bōchō significa "cortador de hojas" en japonés. Gracias a su filo recto y punta cuadrada, la forma del cuchillo Nakiri permite picar y cortar de manera eficiente, lo que lo convierte en la opción más adecuada para chefs y cocineros domésticos que preparan grandes cantidades de verduras a diario. El filo recto de la hoja garantiza un contacto óptimo y estable con la superficie de corte y permite un movimiento fluido para un excelente control de la hoja y un trabajo preciso.
→ La serie Gekko tiene una hoja más baja y ligeramente desplazada con respecto al mango. La ventaja de este diseño es que ofrece mayor espacio para los nudillos, aunque la hoja tiene el ancho normal de un cuchillo gyuto versátil.

→ Un perfil ancho para picar y transferir los alimentos con facilidad.
→ Un cuchillo especializado en la
preparación de verduras. La hoja mide 160mm (6.3").

ACERO:

El VG-XEOS es un acero inoxidable de alta calidad producido por Takefu Special Steel, conocida por aceros como el VG-10 y el VG-5. Es una aleación que combina una gran resistencia a la corrosión con una elevada dureza y durabilidad frente al desgaste. La dureza de la hoja es de aproximadamente 62 HRC. Su fina microestructura se consigue mediante un método especial de fusión que mejora la resistencia al desgaste, la resistencia y las propiedades de temple.

El VG-XEOS está diseñado para herramientas de corte de alto rendimiento y ofrece un excelente afilado, una buena retención del filo y resistencia a la corrosión.

LAMINACIÓN:

El acero está laminado, lo que significa que el núcleo está hecho de un acero muy resistente y cubierto por una capa exterior de acero inoxidable más blando − también conocido como revestimiento san-mai.

GEOMETRÍA:

Tiene una hoja con doble bisel (simétrico) (50/50). La hoja presenta un perfil de filo V convexo - hamaguri, lo que significa que la hoja se estrecha desde el lomo hasta el filo en ambos lados con un ángulo común. Este tipo de afilado ofrece un buen equilibrio entre facilidad de corte y robustez.

ACABADO DE LA HOJA:

La firma kanji cincelada a mano es el único elemento distintivo de esta hoja, por lo demás limpia y muy pulida (también llamada migaki) .

MANGO:

La línea Kurosaki Gekko presenta un tradicional mango de madera de roble japonés (Wa) con una forma universal y octogonal que se adapta cómodamente a las manos tanto de usuarios diestros como zurdos. El mango completo está hecho de una sola pieza de madera (sin virola). 

SOBRE EL HERRERO:

Yu Kurosaki es un joven y talentoso maestro herrero que vive en Takefu Knife Village, cerca de la ciudad de Echizen. Sus cuchillos son conocidos en todo Japón y también en todo el mundo por su hermoso y singular diseño y su calidad superior. Las marcas de martillo en la hoja son su acabado distintivo y, al igual que los copos de nieve, no hay dos marcas iguales. No hace falta decirlo (aunque lo diremos de todos modos): sus cuchillos no solo tienen un aspecto magnífico, sino que también están fabricados con acero de alta calidad y tienen un filo afilado como una navaja y duradero.

Antes de abrir su propia forja, Kurosaki-san fue aprendiz de Hiroshi Kato, un maestro herrero con más de 50 años de experiencia en la fabricación de cuchillos. Kato-san es uno de los fundadores de Takefu Knife Village, donde actualmente más de 10 maestros herreros fabrican cuchillos a mano y los exhiben para que los visitantes admiren su trabajo y aprendan más sobre su oficio. Kurosaki-san es el herrero más joven al que la Asociación Takefu Knife Village ha concedido el título de Maestro Nokaji y es profesor sénior allí.
