Wenn Sie leidenschaftlich Messer sammeln, beginnen Sie, die Geschichte hinter jeder Klinge zu schätzen. Und dieses Messer hat wahrlich eine Geschichte zu erzählen.

Vor mehr als 300 Jahren begann eine Eiche am Kifune-Schrein in Japan, mit ihren jungen, noch zarten Zweigen dem Himmel entgegenzuwachsen. Im Laufe der Jahrzehnte wurden aus diesen Zweigen kräftige Äste, und aus dem winzigen Eichensetzling wurde ein großer, mächtiger Baum. Mit seiner üppigen, lebendigen Krone winkte er bei jedem Windstoß den vorbeikommenden Besuchern des Schreins zu und spendete ihnen Schatten vor der sengenden Sonne. Er wurde zu einem wesentlichen Bestandteil des Kifune-Schreins. Ein heiliger Baum. Ein Teil des Hausgottes der Familie des Gründers der Suncraft-Schmiede.

Doch 2019 kam es zur Katastrophe. Ein Taifun traf die japanische Stadt Seki, und die mächtige heilige Eiche stürzte um.

Die Suncraft-Schmiede wollte ihr neues Leben schenken. Mit dem Segen des Priesters machten sie sie zu einem Teil von etwas Neuem, damit sie ihre Aufgabe, den Menschen zu helfen, fortsetzen konnte. Das Holz des heiligen Eichenbaums wurde zu Griffen für die besten Messer von Suncraft verarbeitet. So entstand die Senzo-Dawn-Limited-Edition.

Das Senzo Dawn Limited Edition Gyuto SG2 200 mm (7,9") ist ein vielseitiges japanisches Messer, das in der japanischen Schmiede Suncraft gefertigt wird. Die Klinge ist im gängigen „Sandwich“-Verfahren namens San-mai geschmiedet; der Kern aus SG2-Pulverstahl wird von Schichten aus weicherem Stahl umhüllt, wodurch ein atemberaubendes, tiefschwarzes Damastmuster mit goldenem Schimmer entsteht. Das Messer wird auf etwa 62–63 HRC gehärtet und bleibt dadurch sehr lange scharf. Die Zusammensetzung und Mikrostruktur des Stahls sorgen für eine extrem feine und sanfte Schärfe. Das Messer ist mit einem traditionellen achteckigen japanischen Griff aus stabilisiertem Holz ausgestattet, der von einer speziellen Zwinge aus dem Holz einer 300 Jahre alten heiligen Eiche gekrönt wird.

Das Messer ist ein beeindruckendes Sammlerstück und wird in einer schönen traditionellen japanischen Schachtel aus Paulowniaholz geliefert, die unglaublich leicht und stabil ist.

KLINGENFORM:

Gyuto ist die vielseitigste und nützlichste Klingenform in der modernen Küche. Sie verfügt über ein breites Profil für die einfache Übertragung von Lebensmitteln und ist in Richtung Klingenansatz meist recht flach, was schnelles und einfaches Hacken auf dem Schneidebrett ermöglicht. Eine spitze Klinge ermöglicht das Einstechen sowie präzises, feines Arbeiten. Eine leichte Wölbung zwischen Spitze und Mittelteil macht den Bauch ideal, um die Klinge beim Schneiden vor und zurück zu schaukeln. Sie kann zum Schneiden von Fleisch, Fisch und Gemüse verwendet werden.

STAHL:

SG2-Stahl ist ein Pulverstahl, der für seine Härte und die daraus resultierende Schnitthaltigkeit bekannt ist – dank eines hohen Kohlenstoffgehalts (C) von 1,5 %. Der Stahl enthält außerdem viel Chrom (Cr) – etwa 15 % –, was die Korrosionsbeständigkeit erhöht, sowie Molybdän (Mo), das die Verschleißfestigkeit der Klinge verbessert. Klingen aus SG2-Stahl erreichen dank der feinen Mikrostruktur des Stahls eine hohe Schärfe und behalten diese bei, ohne dass Sie sich um Pflege und Korrosion sorgen müssen.

GEOMETRIE:

Die Klinge ist beidseitig geschliffen (im Verhältnis 50/50) und verfügt daher über eine symmetrische Doppelschliff-Geometrie mit flachem Profil. Sie kann von Rechts- und Linkshändern gleichermaßen verwendet werden.

LAMINIERUNG:

Die Klinge wird in der San-mai-Technik gefertigt. Der Kern aus SG2-Pulverstahl wird von Schichten aus weicherem, flexiblem Stahl geschützt, die auf beiden Seiten des Kerns als Schutzmantel dienen und außerdem Korrosion verhindern.

KLINGENFINISH:

Die Klinge weist ein atemberaubendes tiefschwarzes Damastmuster mit 101 Lagen und goldenem Schimmer auf. Der obere Teil der Klinge trägt eine dezente Signatur der Schmiede in Kanji-Zeichen, die „Senzo“ bedeuten.

GRIFF:

Der traditionelle japanische Griff ergänzt die Klinge hervorragend. Der Griff besteht aus robustem, stabilisiertem Holz und verfügt über eine ganz besondere Zwinge aus dem Holz einer 300 Jahre alten heiligen Eiche, deren Geschichte Sie weiter oben nachlesen können. Der Griff bietet einen angenehmen, sicheren Halt und ist achteckig geformt, sodass er für Rechts- und Linkshänder geeignet ist.

Suncraft ist ein Familienunternehmen in vierter Generation, das auf die Herstellung von Küchenutensilien spezialisiert ist. ☝️ DIESES MESSER KANN PATINA ENTWICKELN

Messer aus Kohlenstoffstählen können aufgrund ihres geringen Chromgehalts (Cr) anlaufen und eine Patina entwickeln. Das Messer ist am empfindlichsten, solange es noch neu ist und sich noch keine Patina gebildet hat. Später schützt die Patina jedoch die Klinge. Diese Messertypen benötigen etwas mehr Pflege:

✔ Wischen Sie es regelmäßig mit einem sauberen und trockenen Tuch ab (das können Sie auch während der Verwendung tun).
✔ Spülen Sie es nach der Verwendung mit lauwarmem Wasser ab und wischen Sie es trocken.
✔ Ölen Sie es regelmäßig mit Messerpflegeöl oder einfachem raffiniertem Sonnenblumenöl ein.
✔ Bewahren Sie das Messer in Papier eingewickelt auf. Das Papier nimmt Feuchtigkeit auf und schützt die Klinge.

Eine Patina ist eine dünne Schicht, die sich auf der Oberfläche von oxidiertem Stahl bildet und ihn vor weiterer Oxidation schützt. Die Patina sollte nicht mit Rost verwechselt werden. Patina schützt die Klinge, während Rost Korrosion und Materialschäden verursacht und daher entfernt werden sollte (siehe Rostradierer).

ALLGEMEINE TIPPS ZUR MESSERPFLEGE:

Der Verschleiß der Klinge hängt von der Qualität des Stahls, der Verwendung und der Pflege der Klinge ab. Japanische Messer werden aus hochwertigen Stählen gefertigt. Befolgen Sie diese Tipps, damit Ihr japanisches Messer in Topform bleibt:

✔ Verwenden Sie ein hölzernes, Kunststoff- oder Gummi-Schneidebrett.
✔ Waschen Sie das Messer nach der Verwendung ab und wischen Sie es trocken.
✔ Verwenden Sie zur Aufbewahrung einen Messerhalter oder eine schützende Messerscheide (Saya).
✔ Eine gute Schneidetechnik ist die beste Voraussetzung, um die Schärfe möglichst lange zu erhalten.
✔ Verwenden Sie Schärfsteine, um das Messer zu schärfen.

Stunning knife with disappointing cutting performance

Visually this is easily one the most beautiful knives that I own. Fit and finish is great, the blade and handle look amazing.
But unfortunately this knife does not back up it's looks with performance. The blade is so sticky that it is very unpleasant to use. Dicing onions with the knife is borderline dangerous.
Every time I give this knife a chance I notice that I put it down after 3 minutes and grab another knife to finish the cutting job I started.
I really wanted to like this knife and my expectations were very high, as they should be for a 450 euro knife, but unfortunately it just sits in my knife drawer unused because anything else in my collection outperforms it (usually by a lot)...

My holy “Masaki” family tree knife.

My family name, Masaki (正木) roughly means "elegant tree,” derived from masa (正) correct/beginning/great/superior, etc, and ki (木), meaning "tree.” It is no wonder that the purchase of the limited edition Senzo Dawn by Suncraft was an irresistible buy for me. What came was the 101 Layer Black Damascus R2 (SG2) blade with stabilized Oak Wa that incorporated a 300 year old Holy Oak ferrule Gyuto. I was taken aback by the beautiful black Damascus pattern with its golden sheen. The spacer between the stabilized wood and the holy oak merged seamlessly. Even the box it came in was beautiful, complete with the number “065/150.” But looks are not the only thing it has, while doing the paper-cutting test, it passed through it with ease. With its rounded Gyuto cutting profile, rock chopping veggies and slicing meats cover about 90% of my routine kitchen duties. About the only downside I could see was that it doesn’t have a long enough flat cutting profile to chop with at the heel, as it is rounded all the way through the cutting edge. Ironically the choil was not rounded, but this was obviously not a deal-breaker for me. In the end, I felt that the price of this purchase was easily justified because of the quality of materials, the high level of craftsmanship, great design, and together with the basic fact that this is a limited product. Quite a rarity, after all, the people of Japan do not go around cutting down holy trees for profit; such a find is scarce. This is indeed, my holy “Masaki” tree knife, and I quite literally could not resist getting one. Thank you to SharpEdge and Suncraft for working together to bring me this wonderful product.

Refined beauty

The knife is a real masterpiece. A feast for the eyes, as well as for use. The traditional Japanese handle fits wonderfully in the hand. And the blade with a unique damascus pattern is exceptional.

This knife is a demonstration of top design and craftsmanship. The knife embodies hundreds of years of tradition. It fits very nicely in the hand. But it is waiting for serious use.
