Wer leichte Messer mag, wird dieses Messer lieben! Ich benutze es täglich mehrere Stunden für vielseitige Zutaten und es ist super scharf! Mein erstes SG2 Messer und ich bin total begeistert :)
I bought this knife as a complement to my legendary ZDP-189 Bunka.
As soon as I took it out of the box, I used it to slice a large turkey breast into perfectly even, thin fillets. It was pure magic.
And the best part is that this steel will keep performing wonders for months, while other knives become dull after just a week or a month.
This Tojiro Mioroshi Deba (210mm) in Shirogami-2 is the perfect combination of brute strength and surgical precision. The hardness and purity of the White Steel #2 allow it to take a terrifyingly sharp single-bevel edge that glides through fish and bones effortlessly without losing its bite. It feels incredibly solid and powerful in hand, yet agile enough for delicate filleting on the line. It is a reactive carbon masterpiece built for hard, professional kitchen work.
SharpEdge delivers another world-class experience with unmissable details:
Authentic Japanese unboxing: Arrived beautifully wrapped in traditional Japanese newspaper inside its screen-printed box—a true nod to heritage.
The perfect touches: It came with a lovely handwritten note and their signature complimentary band-aid (which you will need with an edge this sharp!).
Lightning-fast delivery: Arrived from across Europe in less than 24 hours.
An absolute powerhouse of a knife backed by the best customer service in the industry!
As a professional working in a high-volume sushi bar, I was looking for the ultimate scalpel, and this ZDP-189 Gyuto (65-67 HRC) with an ebony handle has exceeded all my expectations. The edge retention is from another planet; it laughs at the abrasiveness of the nori seaweed and cuts through rolls with surgical precision. Thanks to the convex geometry and the Tsuchime hammered finish, the seasoned rice never sticks to the blade. Furthermore, the ebony handle is dense, highly hygienic, and perfectly balanced to prevent hand fatigue after hundreds of continuous cuts. Truly a tool for life.
On top of that, the buying experience with SharpEdge has honestly been one of the best of my life:
Stunning traditional presentation: The knife arrives in a beautiful Japanese-style box with gorgeous screen printing. Wrapping it in traditional newspaper, exactly how the master blacksmiths do it in Japan, is a touch of pure authenticity.
Heartfelt details: It came with a handwritten thank-you note and—hilariously enough—a complimentary band-aid, which is an incredibly clever and funny detail considering how terrifyingly sharp this beast is!
Blazing fast shipping: It took less than 24 hours to arrive at my doorstep from the other side of Europe.
If you are looking for an elite knife and flawless service, look no further. This shop is on a whole different level!
Das Messer ist unglaublich leicht, liegt sehr gut in der Hand.
Es ist scharf, präzise und macht die Arbeit in der Küche einfacher.
I added this matching sheath for just six euros during checkout, and it’s a fantastic purchase. The quality feels surprisingly solid, and it fits the knife perfectly. An absolute no-brainer to keep a premium blade protected on a budget!
I was looking for a versatile knife to clean and fillet decent-sized fish, and this 210mm Mioroshi Deba completely delivered. Being slightly leaner than a traditional Deba, it offers incredible agility without losing the heft needed for bones. The Shirogami (white paper steel) comes with a spectacular out-of-the-box edge and responds beautifully to touch-ups. A must-have professional tool if you are looking for precision and performance in Japanese cuisine.
Bought a load of these- slightly smaller than anticipated but they hold a sensible sized quantity of tea - design is cool, quality is high, love them!
Hello Sam,
Thank you for your honest reviews.
We’re glad to hear you found the bowl nice. From a Western perspective, this can look like a small bowl at a relatively high price. In Japan, however, a miso bowl is a very specific everyday vessel. It is light, warm in the hand, and made to be lifted and sipped from directly. This piece was selected as a more traditional, handcrafted wooden miso bowl rather than a basic everyday bowl.
One of the practical benefits is that you can comfortably hold it in your hands while drinking miso soup, as the wood does not get hot in the same way as ceramic.
Thank you again for the feedback.
Warm regards,
Iva
Sehr gut geeignet, um zwischen den Kulturen zu hacken, Beikräuter zu entfernen und die Beetränder kurz zu halten. Ohne viel Kraft und Aufwand. Schnell, leicht, wendig, scharf.
It is beautiful,a jewel in the knife collection and incredibly sharp, definitely worth the money.
Bought this as my first Japanese knife, exceptional value for money. Put my own edge on it and now it cuts effortlessly and exactly how I wanted. Keeps an edge very well and I haven't had to resharpen yet after a month of moderate use.
the strop has two side with different textures, on the granier side i put a compound and finish with the other.
Beautiful pattern, great balancement and sharpness, just be careful (as all carbon knife) to corrosion
Bin wirklich begeistert!!!
Herzlichen Dank und viele Grüße aus Schweden

Beautiful knife, arrived as sharp as it could be, cuts as a laser as expected of a Kurosaki knive. The pictures on the website can be a little deceiving (due to the lighting), the hammer marks are not contrasted, they are the same color as the stainless steel cladding. It's even more beautiful in real life.
Hello Marius,
Iva from SharpEdge here. Thank you very much for taking the time to leave such a nice review.
I’m really glad to hear the knife arrived very sharp and that you’re happy with how it cuts.
I also understand what you mean about the photos. Since these are product photos, it can sometimes be difficult to capture the knife exactly as it looks in real life. Lighting has a strong influence.
Some product pages already include extra photos so customers can see the knife in a more natural setting, but if you ever want to be sure before a future purchase, you can always write to us and ask for an extra photo of the exact knife.
Thank you again for the feedback.
Warm regards,
Iva
