we are also using it for other stuff like dry aged prosciutto di cervo, sopressata toscana, pesce spada, carpaccio di polipo... but also classic BBQ (without bones) like tagliata di manzo, collo di maiale

I bought this knife because of it's slightly smaller size. It is very versatile, light and easy to use. It kind of gives you an understated, Plain Jane, impression that belies it's quality and usefulness. It is actually a very useful and beautifully crafted knife. I love using it.

The ordering process was efficient and my knife arrived in a timely manner. However, I paid for the leather case and it is damaged. It is quite possible the damage was caused by the knife as I was putting it in for the first time. I know the knives are meant to be incredibly sharp but I think the custom case that comes with it should be a bit more sturdy than to be cut when I am (very carefully) inserting the knife into it.
I can't say enough good things about how well my Tojiro knives perform, and I even have a pair of scissors, which also cut like a dream!
All razor-slim knives translate to buttery cuts, happy forearms, safety, cleanly sliced vegetables, and FUN!!
"thickness at heel and/or spine" is the measurement to always know. Any knives around 1.7 mm and below cut like butter, and THIS Tojiro knife continues to taper distally, all the way to the tip, which is roughly .3mm !! :) :) happy slicing
