Táto séria existuje len v 150 nožoch petty a 150 nožoch gyuto, pričom každý je v očíslovanej krabičke. Posledná várka 60 nožov (krabičky 091–150) je teraz dostupná. Vyberte si svoje obľúbené číslo, kým nebude preč!

Keď ste vášnivým zberateľom nožov, začnete si vážiť príbeh, ktorý sa skrýva za každou čepeľou. A veru, tento nôž má čo rozprávať.

Pred viac než 300 rokmi začal dub pri svätyni Kifune v Japonsku siahať k oblohe svojimi mladými, stále krehkými vetvičkami. Ako desaťročia plynuli, tieto vetvičky vyrástli na silné konáre a z malého dubového semenáčika sa stal veľký, mohutný strom. So svojou sviežou a bujnou korunou mával pri každom náraze vetra na návštevníkov svätyne a svojím tieňom ich chránil pred spaľujúcim slnkom. Stal sa neoddeliteľnou súčasťou svätyne Kifune. Posvätným stromom. Súčasťou rodového božstva zakladateľa kováčskej dielne Suncraft.

V roku 2019 však udrela katastrofa. Mesto Seki v Japonsku zasiahol tajfún a mohutný posvätný dub padol.

Kováčska dielňa Suncraft mu chcela dať nový život. S požehnaním kňaza z neho vytvorili súčasť niečoho nového, aby mohol pokračovať vo svojom poslaní pomáhať ľuďom. Drevo posvätného duba použili na výrobu rukovätí najlepších nožov Suncraft. A tak vznikla séria nožov Senzo Dawn Limited edition.

Senzo Dawn Limited Edition Petty SG2 Damascus 150 mm (5,9") je viacúčelový japonský nôž vyrobený v japonskej kováčskej dielni Suncraft. Čepeľ je kovaná bežnou vrstvenou metódou „sendviča“ nazývanou san-mai; jadro z práškovej ocele SG2 je obalené vrstvami mäkšej ocele, čím vzniká úchvatný ebenovočierny damaškový vzor so zlatistým leskom. Nôž je zakalený na približne 62-63 HRC, čo znamená, že zostane ostrý veľmi dlho. Zloženie a mikroštruktúra ocele poskytujú mimoriadne jemnú a hladkú ostrosť. Nôž má tradičnú japonskú osemhrannú rukoväť zo stabilizovaného dreva, zakončenú špeciálnou objímkou vyrobenou z dreva 300-ročného posvätného duba.

Nôž je úchvatným zberateľským kúskom a dodáva sa v krásnej tradičnej japonskej škatuľke z paulovnie, ktorá je mimoriadne ľahká a pevná.

TVAR ČEPELE:

Nože petty sú určené na menšie úlohy na doske aj mimo nej. Nôž petty je nepostrádateľným nástrojom v každej kuchyni a možno ho použiť na šúpanie, sekanie, krájanie a zdobenie jedla. Nože petty alebo univerzálne nože sú v podstate menšou verziou nožov gyuto alebo kuchárskych nožov. Vďaka dĺžke čepele ich možno používať aj ako samostatný nôž, ak vám dlhšie čepele nevyhovujú. Nevyhnutný nôž do každej kuchyne!
Použitie: šúpanie, orezávanie, zdobenie, vykrajovanie, sekanie byliniek, sekanie cesnaku, krájanie malých kúskov sušeného mäsa, orezávanie mäsa, filetovanie malých porcií rýb a podobné úlohy.

OCEĽ:

Oceľ SG2 je prášková oceľ preslávená svojou tvrdosťou a následnou schopnosťou udržať ostrie - vďaka vysokému obsahu uhlíka (C) 1,5 %. Oceľ má tiež vysoký obsah chrómu (Cr) - približne 15 %, čo zvyšuje odolnosť proti korózii, a molybdénu (Mo), ktorý zlepšuje odolnosť čepele proti opotrebovaniu. Čepele z ocele SG2 dosahujú vďaka jemnej mikroštruktúre ocele vysokú ostrosť a dokážu si ju udržať bez nutnosti obávať sa údržby a korózie.

GEOMETRIA:

Čepeľ je brúsená z oboch strán (v pomere 50/50), takže má geometriu s obojstranným ostrím a plochý profil a môžu ju používať praváci aj ľaváci.

VRSTVENIE:

Čepeľ je vyrobená technikou san-mai. Jadro z práškovej ocele SG2 chráni z oboch strán vrstva mäkšej a tvárnejšej ocele, ktorá slúži ako ochranný plášť jadra a zároveň zabraňuje korózii. Nôž sa ľahko udržiava a brúsi na vodných kameňoch.

POVRCHOVÁ ÚPRAVA ČEPELE:

Čepeľ zdobí úchvatný 101-vrstvový ebenovočierny damaškový vzor so zlatistým leskom. V hornej časti čepele sa nachádza nenápadný podpis kováčskej dielne v znakoch kandži, ktorý znamená „Senzo“.

RUKOVÄŤ:

Tradičná japonská rukoväť dokonale dopĺňa čepeľ. Rukoväť je vyrobená z pevného stabilizovaného dreva a má veľmi špeciálnu objímku vyrobenú z 300-ročného posvätného duba, ktorého príbeh si môžete prečítať vyššie. Rukoväť poskytuje príjemný a stabilný úchop a je osemhranná, takže je vhodná pre pravákov aj ľavákov.

Suncraft je rodinná spoločnosť pôsobiaca už v štyroch generáciách, ktorá sa špecializuje na výrobu kuchynských nástrojov. Kováčska dielňa bola založená v roku 1948 a nachádza sa v prosperujúcej výrobnej oblasti mesta Seki v prefektúre Gifu, kde má spracovanie ocele tradíciu siahajúcu do čias samurajských bojovníkov.

Knife is perfectly balanced, razor sharp and quality. Only issue is the blade is fairly narrow so if you have large hands I wouldn’t recommend it. But other than that it’s amazing.
