Unryu Original No.20
Unryu Original No.20 is a smaller, hand-made Japanese knife with a damascus pattern and a laser-sharp blade designed for extremely precise and delicate cuts. The length of the whole knife is 180mm (7.1"), of which the blade is 60mm (2.4").
STEEL AND CARE:
The blade is hand-forged from Aogami steel (Blue steel 2) with a hardness of 61-62 HRC. The entire surface of the knife (blade and handle alike) is adorned with an interweaving damascus pattern, poetically dubbed "the movement of clouds in the wind". The blade is single beveled, the blade and the handle both made of steel. The core and outer layers of the knife have a smaller percentage of Chromium, which means that this blade will get some patina with use over time. The knife needs to be taken care of though, it should not be left wet and have oil applied to the blade every so often - we recommend using Ballistol oil.
USAGE: As this Kiridashi is a bit smaller and finer, it is recommended for internal use for fine upholstery, cutting stitches on leather and fabric, opening smaller packages, office tasks - opening letters, packing.
FUN FACT: Unryu literally means "Cloud Dragon Paper" and could refer to a handmade natural fiber paper, translucent and very gentle, or a mythical creature in Japanese folklore.
Use & Care:
- Handwash in warm water and towel dry
- Use a sharpening stone (not a honing steel!) to sharpen your knife
- Do not put the knife in a dishwasher
