Tojiro Petty Damascus 90mm, sometimes also called a paring knife, is a small and highly versatile kitchen knife. Paring knives offer more dexterity, precision, and maneuverability than the larger, multi-purpose knives, therefore its main tasks are peeling, slicing, and trimming.

Tojiro manufactures these blades from the good performing VG-10 steel with the hardness of 61 HRC, which is clad into 36 layers of softer stainless steel, featuring a beautiful Damascus pattern.

The blade extends into a traditional Japanese round Wa handle made of magnolia wood with a buffalo horn ferrule. The handle has an emphasized angle for a better grip, which makes it more suitable for right-handed users.

โœ” Use a wooden, plastic or rubber cutting board.
โœ” After use, wash the knives and wipe them dry.
โœ” For storage, use a knife holder or a protective knife sheath (saya).
โœ” A good cutting technique is your best bet to prolong sharpness.
โœ” Use sharpening stones to sharpen the knife.

โ—๏ธDonโ€™t leave the knife in the sink. Wash it by hand.
โ—๏ธDonโ€™t wash the knife in the dishwasher.
โ—๏ธDonโ€™t use the knife on glass, ceramics, marble or steel surfaces.
โ—๏ธDonโ€™t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
โ—๏ธKnife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.

I can't say enough good things about how well my Tojiro knives perform, and I even have a pair of scissors, which also cut like a dream!

All razor-slim knives translate to buttery cuts, happy forearms, safety, cleanly sliced vegetables, and FUN!!

"thickness at heel and/or spine" is the measurement to always know. Any knives around 1.7 mm and below cut like butter, and THIS Tojiro knife continues to taper distally, all the way to the tip, which is roughly .3mm !! :) :) happy slicing
