Kiridashi is a handy, multi-purpose knife and a versatile helper in every household, garden, woodcarving workshop or other handicraft trades.
This simple but sophisticated tool is used, without exception, by all woodworkers in Japan, while it also excels at household tasks and different hobbies. Boxes, trees, wood, you name it – these little beauties have you covered.
Kiridashi Kogatana is a Japanese blade for shaping, whittling, carving and even grafting trees in your garden. The single bevel blade has a small angular tip that usually features a sharp point and a chisel grind, which makes it a perfect tool for tasks requiring precision.

It translates directly to a “small cutout sword”. It is traditionally a craft knife with pure, minimalist design and a beautiful wooden handle that blends seamlessly into its twin, a protective sheath or saya. They are both made from the same block of wood.The single bevel blade is suitable only for right-handed users!

The single-bevel blade is hand-forged from Aogami steel (Blue steel 2), hardness 61-62 HRC. The core and outer layers of the knife have a lower percentage of chromium, which means that the blade will get some patina over time. The advantage of such a blade is that it has a very fine sharpness, which lasts a long time and is eventually very easy to touch up.

ABOUT THE SMITHY:
The knife was made in Seki, the cradle of ancient forging skills in Japan with more than 800 years of tradition in manufacturing katanas and other Samurai weaponry. A knife that will last you a lifetime!

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
