SharpEdge "Diamond" Sharpening Set contains a lower granulation (#360 and #600 grit) combination diamond stone, as well as a finer combination whetstone of #1000 and #6000 granulation. This sharpening set is suitable for sharpening any type of knives, Japanese or not.
We recommend starting to sharpen on the #600 grit diamond stone. #360 grit side can be used for repairs of broken tips or chipped blades, or very blunt knives. Don't forget to attach the Guide clip on the blade, so it will keep the same angle (approx at 16°) during sharpening. A few strokes on each side of the knife on the #600 stone will remove enough steel since diamond stones are very abrasive, so you can very quickly move onto the #1000 grit sharpening stone. You should spend most of the time on the #1000 stone.
Once you achieve good burr across the whole length of the blade, proceed to the #6000 grit stone and repeat the process. Once we get a burr on the finer stone, we finalize our sharpening process with the Leather strop, which will remove any remnants of the burr and give us the desired smooth, fine sharpness.
