Mcusta Sujihiki Hybrid Splash in 240mm (9.5") blade length is another beautiful kitchen knife, cut out from the beams of Mcusta's lasers, and then sharpened to a razor-edge sharpness by hand. It got its name (Splash) due to the very pronounced Damascus pattern on the blade, making every single blade a unique piece of art, so this knife is a great choice for all the Damascus lovers out there.
Sujihiki or slicer knives are intended for long pulls and precise cuts of meat and fish. The long and narrow blade is particularly useful for slicing meat or boneless fish, or for filleting and skinning fish. We should not forget to mention that this is a perfect knife for preparing sushi/sashimi. It's also a perfect knife to cut salami and other dried meat products. The long blade allows the meat or fish to be cut in a single drawing motion, from heel to tip. Compare to a yanagiba knife, a traditional Japanese sushi knife, sujihiki knives are double bevel, so there is no need to learn a new cutting technique as with single bevel knives.
Hybrid Splash features a more simplistic, but very ergonomic handle, made of non-slip pakka wood. Small textures on the hexagon-shaped handle prevent our hands from slipping, even with wet hands. A simple, yet aesthetic luminescent pin holds the full-tang handle securely in place, while the stainless bolster attaches perfectly to the handle, featuring a decorative red spacer.
About Mcusta Zanmai:
Mcusta Zanmai has an interesting (and very high tech) philosophy of knife manufacturing. With their 800-year tradition of making knives, they decided to incorporate traditional knife craftsmanship knowledge into their own custom-made machines. Mcusta is the only knife manufacturer who uses laser machines to cut out the knives, instead of stamping the knives out of the steel sheet. Due to this process, their blades are less susceptible to structural stresses in the steel, making them the most innovative and modern knife maker in Japan.
Handles and pins are milled to the precision of 1/1000mm with their high-quality CNC machines. Every knife is then inspected and assembled by hand. The final (sharp) edge is sharpened by Mcusta's team of master craftsmen to get a very good out-of-the-box sharpness.

The knife is not razor sharp OOTB, but after a few strokes on 3K and 8K became scary. Great performance and super comfortable though the handle is not a typical Wa one. After all is a Takeshi Saji....

I've upgrading some of my Western knives to higher-quality Japanese knives and recently purchased the HAP-40 Petty Black 135mm (5.3") [Tottori Sand]. It's really a work of art, highly functional, and razor sharp out of the box; this particular knife is really too nice to take to a commercial kitchen, where I grew up, but a real treat at home where you can take better care of it. Sharp Edge also carries knives that are a bit less fussy and would do well in commercial use and are great cost-effective solutions. Many traditional Western-style knives with smaller blades inevitably come with much smaller handles that are difficult to grasp, but the traditional octagonal Japanese handles are especially welcome in that regard.
