Discover the Kajiyamura Hakuun Petty VG-10 Damascus 150mm — a versatile, beautifully crafted kitchen knife that will take your cooking up a notch. Made from high-performance VG-10 steel with a stunning 17-layer Damascus finish, this knife delivers exceptional sharpness and long-lasting edge retention. Its balanced, symmetrical blade and comfortable brown pakka wood handle offer effortless control for right- and left-handed users alike. Whether slicing meat, fish, or vegetables, this Petty combines traditional craftsmanship with modern performance and style.

BLADE SHAPE:
The petty knife is the Japanese equivalent of a Western utility knife — compact, agile, and ideal for precision tasks. At 150mm, it strikes the perfect balance between maneuverability and cutting length, making it ideal for peeling, trimming, or slicing small fruits, herbs, and garnishes.

STEEL:
VG-10 steel is great for professional environments, mainly due to its excellent edge retention and stainless qualities, while at the same time being ideal for the home cook that wants a reliable knife that won't need much maintenance.

VG-10 steel is stainless steel with relatively high Carbon (C) content (1%), 15% Chromium (Cr), 1% Molybdenum (Mo), 0.3% Vanadium (V) and 1.5% Cobalt (Co). The combination of Cr, Mo, and V forms a lot of hard carbides, making the steel abrasion resistant, which translates to long-lasting, smooth sharpness.

LAMINATION:
The core layer consisting of VG-10 steel was sandwiched between 16 layers of softer steel. This technique is called san-mai and is used to protect the hard (but delicate) core from outside factors and physical impacts, which could lead to breakage.

GEOMETRY:
It has a double bevel (symmetrical) blade.

BLADE FINISH:
The blade has a 16-layer damascus finish. The blade is engraved with the kanji character 白雲: Hakuun, which means "white cloud."

HANDLE:
Western (Yo) style handle with steel rivets made from brown pakka wood.

BLACKSMITH:
This knife is crafted by Miki Hamono, a family-owned smithy located in Miki City, Hyogo Prefecture. Established in 1935, this small-town workshop honors traditional Japanese sword-making techniques passed down through generations. They specialize in forging high-quality dual-layer blades combining hard steel and soft iron, blending durability with flexibility.

☝️ Japanese kitchen knives in our store are handmade from natural materials. Slight variations in color, texture, weight and other dimensions are possible. We try to give a good photographic representation of our products, however computer screen resolution and colors do vary, so products might not look exactly as they are seen on screen.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.

Maybe the stickiest knife ever made!

Make no mistake this knife has very good core metal! You can’t go wrong with VG10!
I’m a professional with a collection of over 30 knifes and this one sticks on food like nothing else!its like a glue on food or something ..In My opinion this is unacceptable for 180€ knife.

Hey Vaggelis,

David from SharpEdge here. Thank you for your review.

We understand your frustration with food sticking to the blade, this can often happen with very thin knives that feature a Damascus finish. In this case, the surface of your blade might be more polished than those you’ve used before, which can make food cling more initially.

That said, after a few uses, the blade usually develops micro-scratches that help reduce the sticking effect noticeably.
If you have any other questions or need assistance, feel free to reach out.
Best regards,
David
