Hokiyama Gyuto Swirl Damascus in 210mm (8.3") blade length is a multi-purpose Japanese kitchen knife, suitable for use at home, as well as in a professional kitchen. Gyuto, or Chef's knife, is a versatile kitchen knife that will shine with all kinds of chopping, slicing and rocking motions on the kitchen board.

A very distinct 33-layered Damascus pattern enriches the visuals of the blade - this pattern is unique to every knife and cannot be replicated. Damascus pattern is in parts round and curvy, hence the name "Swirl Damascus". Like your fingerprint, not one blade is alike. The entire blade is polished to a reflective mirror polish. You can see yourself in it!

At the very edge, one can spot a pronounced, curvy line (matte finish) that travels along the entire length of the blade. This is the line between the core and the 33 softer, outer layers of steel that serve as additional protection of the core steel. Such sandwich of the harder core steel and softer outer steels is called san-mai clad. Most of today's Japanese knives are made this way.

The heart of this petty is made of Aichi's AUS-10 stainless steel, which was hardened to around 62 HRC. Due to its high content of Chromium (Cr), AUS-10 steel will resist corrosion very well.

→ TOTTORI SAND: Traditional Japanese handle with a modern twist in a sandy brown color named Tottori Sand. Inspired by the infinitely swirly Tottori sand dunes found in the western part of Japan.

We chose a universal, octagonal shape that comfortably fits the hands of both right- and left-hand users. It offers a firm grip for easy and comfortable use of the knife and makes even the most difficult tasks a breeze. The weight of the handle is suited to Japanese blades, so the knife will be evenly balanced.  

Handles are made of natural maple wood harvested in North China, Russia and the USA. It undergoes a special procedure of stabilization with resin, which ensures a very long service life of the handle. During this process of stabilization, a color pigment is added and is then absorbed in the wood fibers. After the final treatment and polishing, the handle reveals the grain of the wood. For the handles, blocks of maple with irregular and non-uniform structure are used, thus the dyes penetrate the wood in different ways, creating unique patterns. This makes every handle one-of-a-kind.
