Tojiro Santoku DP 37 170mm (6.7") is a new budget superstar from the hands of Tojiro's blacksmiths. The knife is very sharp out-of-the-box and is ready to make some (precise) damage to the food you're about to prepare.

BLADE SHAPE:
The santoku shape is the most popular knife shape in Japanese home kitchens, so have no doubts it will work well as a multi-purpose knife in your kitchen too. Dicing, slicing and mincing are the preferred moves with santoku knives. 

STEEL:
This Santoku knife is part of the Tojiro's DP 37 knife series, featuring a popular VG-10 core steel.

LAMINATION:
The core layer is clad into 36 layers of softer steel. 

GEOMETRY:
It has a double bevel (symmetrical) blade.

BLADE FINISH:
The blade has a simple, yet beautiful Damascus look.

HANDLE:
A durable and fairly light (no bolster) stamina wood handle is used, allowing for an ergonomic and fatigue-less grip. The handle has three rivets for a secure fixation, reducing the possibility of cracks in the handle.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.

My GF loves it

Used the custom engraving service to make this a present for my GF. She loves it. Actually, we both love it.

Have some IKEA 365 knives, which are great for the price, but suck in comparison.

And we also have a block of Zwilling, which aren't bad, but are way heavier, handle worse, and when cutting, stuff sticks to the knives way more.

This one though - the Tojiro DP Santoku - basically has perfect balance - you automatically grad it the correct way. And it's way lighter. It's not (yet) as sharp as our Zwilling knifes, but I'm very sure that this will come after first sharpening it.

Overall, love it, and now she wants to order a complete set for me as a christmas present as well, because it's so great.

Tips when you order it: I would not take the japanese gift wrapping again, it's just regular paper wrapping with a japanes image, as far as I can tell. Nice for a gift, but pointless if you order it for yourself (or people who don't care about the wrapping). Also, a knife block at 45 deg or similar would be nice.

Still, love it!
