Compact, precise, and stunningly elegant—the Hado Ko-Bunka SG2 Shiosai Urushi 135 mm is your ultimate Japanese utility knife for everyday prep and professional kitchens. Its hand-forged SG2 powder steel blade is finished with subtle nashiji (hammered) detailing, reducing food adhesion while delivering razor-sharp precision.
BLADE SHAPE: The Ko-Bunka blends the elegance of a traditional Bunka with the practicality of a Santoku, delivering clean, controlled cuts with every motion. Its distinctive Bunka profile features a sharp Tanto-inspired tip, perfect for herbs, vegetables, and smaller pieces of meat. Compact, precise, and versatile, the Hado Ko-Bunka is a utility knife ready to shine in any kitchen.
*The cutting edge measures 126 mm (heel to tip), but the total blade length from handle to tip is 135 mm.
STEEL: This Ko-Bunka is made of SG2 powder steel, hardened to around 62-63 HRC. Powder steels are among the hardest steels used in knife making today, which means the knife will keep a smooth and sharp edge for an extremely long time. Due to the high content of chromium (Cr) in its steel structure, it is also incredibly easy to maintain. The composition and microstructure of the steel provide extremely fine and smooth sharpness.
BLADE FINISH: Renowned for their elegance and precision, Hado knives feature distinctive tsuchime hammering that fades into a subtly misted migaki finish, highlighting the polished SG2 steel core. Every knife is paired with carefully designed packaging that reflects its craftsmanship.
HANDLE: The knife features a traditional octagonal wa handle that perfectly complements the balanced blade, offering a secure, comfortable grip and exceptional durability for everyday use.
The handle is slightly longer than typical for a blade of this length, yet it feels perfectly balanced in the hand—whether held with a proper pinch grip or in a traditional Western-style grip. This design ensures comfort, control, and precision across all cutting techniques.
SMITHY: Hado is a young yet highly respected Japanese smithy from Sakai, founded in 2019 as a subsidiary of Fukui Co. & Ltd. Blending tradition, innovation, and the founders’ passion for the “path of the blade,” each knife reflects centuries of blacksmithing heritage, masterful handcraft, and modern respect for materials, ergonomics, and design. Hado is synonymous with Japanese precision, minimalist beauty, and pure craftsmanship.

☝️ Japanese kitchen knives in our store are handmade from natural materials. Slight variations in color, texture, weight and other dimensions are possible. We try to give a good photographic representation of our products, however computer screen resolution and colors do vary, so products might not look exactly as they are seen on screen.
☝️ THIS KNIFE MAY DEVELOP PATINA
Knives made of carbon steels can, due to their low chromium (Cr) content, discolor and develop patina. The knife is the most sensitive when it is still new and a patina had not developed yet, but later, patina will protect the blade. These types of knives require a touch more care:
✔ Wipe it regularly with a clean and dry cloth (you can also do this during use). ✔ After use, rinse it with lukewarm water and wipe it dry. ✔ Coat it regularly with knife maintenance oil or plain refined sunflower oil. ✔ Store the knife by wrapping it in paper which will absorb moisture and protect the blade.
A patina is a thin layer that forms on the surface of oxidized steel and protects it from further oxidation. The patina should not be confused with rust. Patina protects the blade, while rust causes corrosion and deterioration of material, so it should be removed (see Rust erasers).
Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:
❗️Don’t leave the knife in the sink. Wash it by hand. ❗️Don’t wash the knife in the dishwasher. ❗️Don’t use the knife on glass, ceramics, marble or steel surfaces. ❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead. ❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
