Kai Shun Seki Magoroku Red Wood Utility 150 mm is a versatile kitchen knife combining minimalist Japanese design, long-lasting sharpness, and robust construction at an accessible price. BLADE SHAPE:
The 150mm Utility knife is a versatile kitchen tool perfect for precise slicing, chopping, dicing, and julienning. Its compact size classifies it as a short utility knife, combining the characteristics of a Gyuto with a slightly curved blade for smooth, controlled cuts. Ideal for home cooks or smaller work surfaces where precise control and a comfortable grip are required.
The blade’s heel tip is rounded for added safety, minimizing the risk of accidental cuts during use.
STEEL:
The polished blade is made from newly developed corrosion-resistant 6A/1K6 steel, hardened to 58 (±1) HRC, offering a perfect balance of sharpness, edge retention, and easy maintenance. Its slightly curved spine ensures a secure grip for precise slicing and rocking motions.
BLADE FINISH:
The knife features a migaki polished finish with the series’ kanji engraving: Seki: 関, Mago: 孫, Roku: 六.
HANDLE:
The slim and elegant handle is made from durable pakkawood, shaped in the traditional Japanese chestnut (D-shape) design, and slightly offset to the right from the center of the blade, making it ideal for right-handed users. Resin added to the wood enhances moisture resistance and long-term durability. A small rim on the right side provides a secure and comfortable pinch-grip, preventing hand slippage during cutting. The integrated tang ensures stability and excellent balance for the knife.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:
✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.
❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
