Tojiro Deba Shirogami is a medium-sized deba designed fish lovers and professional chefs. The blade thickness is at hefty 7mm (0.28"), the blade length is 165mm (6.5"), so it is suitable for filleting medium-sized fish. The D-shaped handle is made from traditional magnolia wood with a resin ferrule.

The blade will develop patina! The knife is forged from the purest carbon steel - Shirogami #1 steel, the hardness of around 61-62 HRC and is intended for the more demanding user who can handle and take care of it. The advantage of such a steel is that it has a very fine, gentle sharpness, is easy to sharpen and stays sharp for a very long time. Ballistol oil is recommended for the care of such blades.

☝️ THIS KNIFE MAY DEVELOP PATINA

Knives made of carbon steels can, due to their low chromium (Cr) content, discolor and develop patina.Β The knife is the most sensitive when it is still new and a patina had not developed yet, but later, patina will protect the blade. These types of knives require a touch more care:

βœ” Wipe it regularly with a clean and dry cloth (you can also do this during use).
βœ” After use, rinse it with lukewarm water and wipe it dry.
βœ” Coat it regularly withΒ knife maintenance oilΒ or plain refined sunflower oil.
βœ” Store the knife by wrapping it in paper which will absorb moisture and protect the blade.

A patina is a thin layer that forms on the surface of oxidized steel and protects it from further oxidation. The patina should not be confused with rust. Patina protects the blade, while rust causes corrosion and deterioration of material, so it should be removed (see Rust erasers).

GENERAL KNIFE CARE TIPS:

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

βœ” Use a wooden, plastic or rubber cutting board.
βœ” After use, wash the knives and wipe them dry.
βœ” For storage, use a knife holder or a protective knife sheath (saya).
βœ” A good cutting technique is your best bet to prolong sharpness.
βœ” Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.

Fuck me!! I hate writing reviews a LOT but in this case I had to. I purchased a Tojiro Deba knife on the Black Friday Sale. Unlike other webshops that would ghost you if they make a mistake, which I had quite often lately, theyβ€˜ve sent me an email immediately that the knife I ordered was sold out but they accidentally didn’t update their system. They gave me the option of a refund or the exact same deba knife by the same blacksmith but instead of the buffalo ferrule I ordered it would have a plastic one. I already have chosen to spend the money so it was a nobrainer to go for that option. The plastic ferrule knife had a price difference I didn’t even notice and I still got a refund of that difference I didn’t expect at all. But the cherry on top is that the shipment was way faster then anything I’ve ever ordered before and I already hold that knife in my hands right now. Incredible knifes for a an incredible price and even better customer care!!! Other websites could learn a lot from them!!!
