A professional kitchen knife made using a special Tojiro "know how" method, which allows the knife maximum flexibility. Extremely thin blade that stays sharp for a very long time. It is a very flexible, delicate and precise kitchen knife.
In addition to the aesthetic, the recesses/dimples on the blade also have a useful value, as the uneven surface creates air pockets between the food and the blade when cutting, which prevents the food from sticking to the knife. It is therefore ideal for cutting meat and raw fish such as salmon.

Yesterday I cooked a Chinese meal for a couple of friends: a main mie dish and verious side dishes. Preparing all the vegetables and meat with this Santoku was a joy: effiortless and precise cutting. Probably this inspired me to be as precise in the cooking itself, because we all agreed that it was the best version of this recipe I ever made.
This is the second knife I purchased from SharpEdges. The first one - a Yoshida kiritsuke 135 mm black HAP-40 is also very good. I like the (almost) minimalistic simple but (almost) perfect finish of these Yoshida blades and handle.
All in all I regret that I did not discover your shop earlier. I already have a nice collection of other Japanese knives with different steels and shapes. No need on the short term for replacements or filling some gap. But who knows?
Delivery by DHL Express from Ljubljana to the Netherlands is okay but not perfect. Oh well. Who cares?
