Hatsukokoro Ginrei Bunka Ginsanko Nashiji Ebony 150 mm is a compact, versatile Japanese kitchen knife designed for preparing meat, fish, and vegetables. Its shorter blade offers excellent control and maneuverability, while the distinctive reverse tanto tip makes it particularly useful for precise cutting and detailed food preparation.
The Ginrei series proves that great Japanese knives don't have to be complicated. At the core lies Ginsanko stainless steel (60–61 HRC) in san-mai construction, known for its excellent corrosion resistance, long-lasting sharpness, and ease of sharpening. The blade features a traditional nashiji finish, whose subtle pear-skin texture gives the knife a rustic yet refined appearance.
BLADE SHAPE:
The blade shape is called Bunka, meaning culture in Japanese. It is a highly versatile Japanese knife suitable for preparing vegetables, meat, and fish.
At 150 mm (5.9"), this bunka is more compact and maneuverable than longer all-purpose knives, making it particularly practical for smaller cutting boards, everyday chopping, and precise food preparation.
Its relatively wide profile provides comfortable knuckle clearance, while the mostly flat cutting edge is ideal for controlled chopping and push-cutting. The gently curved belly also allows smooth slicing motions.
One of the bunka's defining features is its distinctive reverse tanto tip, also known as a K-tip. The sharply angled spine creates a fine, pointed tip that is particularly useful for scoring ingredients, making precise cuts, and working with smaller or more delicate ingredients.
The compact blade combines the versatility of a traditional santoku with the added precision of a K-tip, making it an excellent choice for cooks who prefer shorter, highly maneuverable knives.
STEEL:
Hitachi's Silver III steel, also known as Ginsan or Ginsanko, is hardened to approximately 60–61 HRC.
Thanks to its chromium content, Ginsanko offers excellent corrosion resistance and is significantly easier to maintain than traditional Japanese high-carbon steels. Despite being stainless, it shares several desirable characteristics with carbon steels, including the ability to achieve a fine cutting edge and relatively straightforward sharpening.
This combination of sharpness, edge retention, and easy maintenance makes Ginsanko particularly suitable for everyday kitchen use.
LAMINATION:
The hard Ginsanko steel core is protected by two outer layers of softer steel. This construction is known as san-mai, meaning "three layers" in Japanese.
The softer outer layers provide additional support and help protect the harder core from external impacts, contributing to the blade's overall durability.
GEOMETRY:
The knife features a double-bevel (symmetrical) blade with a 50/50 grind, making it suitable for both left- and right-handed users.
Its compact profile provides excellent maneuverability, while the fine cutting edge enables smooth, controlled cuts through vegetables, boneless meat, and fish.
BLADE FINISH:
A traditional nashiji (pear-skin) finish gives the stainless cladding a subtle, textured appearance that contrasts beautifully with the polished Ginsanko core. A soft kasumi line highlights the transition between the steel layers.
The etched kanji on the right side adds character, while the textured finish helps make minor scratches from everyday use less noticeable.
The choil and spine have been carefully smoothed for a comfortable grip and easy handling during extended use.
HANDLE:
The knife features a traditional Japanese octagonal wa handle made from ebony wood. Ebony is a dense, hard, and durable wood, recognizable by its deep, dark color and elegant natural grain.
The octagonal shape provides a comfortable, secure grip for both left- and right-handed users, allowing excellent control during precise cutting tasks. Its refined, minimalist appearance complements the blade's traditional nashiji finish.
