Hasegawa’s soft cutting boards are top-of-the-line cutting boards especially suited for delicate Japanese kitchen knives. The cutting board is machine-washable and bend-proof due to its wooden core being sandwiched between two polyethylene plates and a side polyethylene layer. This board’s polyethylene surface is a great substitute for wood due to its similar characteristics.

This board’s surface is easy to clean, doesn't absorb flavors, and, above all, has less effect on the sharpness of the blade. With some cutting techniques, the thin cutting edge of the knife may chip, so choosing the right cutting board is crucial for longer edge retention. The surface of this board is non-slippery, which improves cutting performance and reduces the risk of injury.

Harder plastic cutting boards usually don’t mix well with the harder steels that Japanese blades are forged from, and can sometimes cause them to chip. Even the higher-end plastic cutting boards usually fall short on two fronts. They are either too soft and therefore prone to bending, or they are made thicker for the same reason, and with that get significantly heftier. Hasegawa solves this issue with the addition of a wooden core that is then sandwiched between two layers of soft polyethylene plastic. The result is a lighter, easy-to-handle cutting board which is at the same time sturdier and won’t bend when weighed down heavily.

This cutting board is also more hygienic – it doesn't absorb scents and flavors from different ingredients that might get left behind in the slits of wooden boards. It’s also safe to wash in the dishwasher – if you have one that’s big enough. 😉

Good but not perfect

Nice and dishwasher friendly cutting board. Not suitable for day to day work, because it will leave small black material pieces on your food. Quite annoying when your food gets micro rubber (or plastic) stains.

This cutting board is made from a softer material to protect the edges of Japanese blades and is best suited for light, precise cuts rather than heavy chopping. Because of softer material, the blades can penetrate deeper into the board if used with a lot of force. That can speed up the process of removing of the outer layers of this cutting board. Unfortunately, this is a process that happens with all cutting boards, but may be a bit faster on softer and more visible darker cutting boards.

You can use a scraper to remove those loose particles after usage. Hasegawa also offers “sand paper” scrapers to keep the cutting board in tip-top condition. We have a few cutting bards in regular rotation, and based on our experience the wear and tear is not too bad.
