Gestura 00 Slotted Chef’s Spoon

The 00 is a nimble creature comfortable reaching into poaching liquid or blanching water, able to fetch tempura from the fryer, or even retrieve fish from a pan of hot butter, maybe to grab some braised greens, check if the beans are done, or pluck an olive from the large jar in the back of the walk-in.

The Gestura 00 may look unassuming at first, but it is a highly specialised chef’s tool. Besides a sharp knife, a good spoon is one of the most valued utensils among the ranks of a kitchen brigade. Cooks may spend countless afternoons at flea markets and antique shops looking for the one spoon that will check all the boxes. At Gestura, they decided to take matters into their own hands and designed a spoon perfectly tailored to chefs’ needs.

It shares most of its DNA with its (fraternal) twin Gestura 01, retaining the 230 mm (9.0”) dimension. The main difference between the siblings is the 00’s slotted bowl. Besides its possible application as a gadget for assistance with weight loss, it is mainly designed for draining. Plucking olives from jars, fetching food from hot oil, poaching eggs… you get the idea.

The flat edges offer excellent scraping capabilities, and the spoon’s total length of 235 mm (9.25”) allows the user to stay at a safe distance during their food retrieval missions. Despite the long handle, the weight balance of the Gestura spoon is skewed towards the bowl, meaning it will sit inside containers without tipping over, even when they are empty.

As any kitchen tool worth talking about, Gestura spoons are produced in Japan. Pressed with antique American presses by dedicated artisans of Niigata Prefecture, they are then tumbled instead of polished to achieve an antique, matte finish that will also scratch less.
