Beginner / Budget Knife Sharpening Set has all the essentials needed to keep your Japanese knives in good shape. This set is suitable for anyone who is starting to learn sharpening technique on a sharpening stone, or for those in need of a good sharpening set without breaking the bank.
This set centers around our SharpEdge #1000/#3000 whetstone, a go-to for everyday sharpening. Easy to use, cost-effective, and great for newcomers or hobbyists, while seasoned sharpeners can reach for high-end stones from Naniwa and Suehiro for finer results.
Products included:
- SharpEdge Sharpening Stone #1000/#3000 – This combination whetstone is used for general knife sharpening to put a new edge on a blunt knife (#1000 grit), as well as for the fine sharpening, polishing and removing the burr (#3000 grit). This is the most common combination stone that is used for general sharpening.
- Knife Sharpening Guide Clip [large] – It helps to maintain the same sharpening angle while sharpening your knife. This model is designed for standard-width knives such as gyuto or santoku.
- SharpEdge Leather Strop [1-sided] – The final step, used to remove any microscopic burr and polish the edge for a perfect, long-lasting finish.
Step-by-step instructions:
- Attach the Guide clip on the blade, so it will keep the same angle (approx at 16°) during sharpening.
- Start with the #1000 grit stone for general sharpening, keeping a consistent angle with the guide clip.
- Move to the #3000 grit stone for finer sharpening.
- Finish with the included leather strop to remove any remaining burr and achieve a precise, razor-sharp edge.
We start our sharpening process on the #1000 grit stone, which is used for general sharpening. Don't forget to attach the Guide clip on the blade, so it will keep the same angle (approx at 16°) during sharpening. Once we achieve a good burr across the whole length of the blade, we proceed to the #3000 grit stone and repeat the process. Once we get a burr on the finer stone, we finalize our sharpening process with the Leather strop, which will remove any remnants of the burr and give us the desired smooth, fine sharpness.
