Mcusta Petty Damascus Flame VG-10 110mm is a compact Japanese utility knife combining precise cutting performance with a striking Damascus pattern. Its 33 layers of stainless Damascus steel create a distinctive flame-like design that flows along the blade, giving each knife its own unique appearance. At its core lies high-performance VG-10 stainless steel, known for its excellent sharpness, good edge retention, and relatively easy sharpening.
With its compact blade, this petty is designed for smaller kitchen tasks where a full-sized chef's knife would feel cumbersome. It is particularly useful for peeling and trimming fruit and vegetables, mincing smaller ingredients, and performing delicate, detailed cuts.
BLADE SHAPE:
Petty is a Japanese utility knife, essentially a smaller version of the gyuto or chef's knife. Its narrow blade and pointed tip provide excellent control for precise cutting tasks, both on and off the cutting board.
At 110 mm (4.3"), this petty is especially maneuverable and well suited to working with smaller ingredients. Its compact size makes it ideal for peeling fruit, trimming vegetables, removing small imperfections, mincing herbs, and preparing decorative garnishes.
Compared to longer petty knives, the 110 mm version offers greater control for intricate tasks, although its shorter cutting edge makes it less practical for slicing larger ingredients or trimming substantial pieces of meat.
The flat ejiri at the bottom of the handle can also be used for lightly crushing garlic and other small ingredients.
STEEL:
The blade features a core of VG-10 stainless steel, a popular Japanese knife steel known for its excellent balance of sharpness, edge retention, corrosion resistance, and ease of maintenance.
VG-10 can achieve a fine, precise cutting edge and retains its sharpness well during everyday kitchen use. Its stainless properties make it particularly practical for preparing fruit, vegetables, and other ingredients that contain moisture or natural acids.
The steel is also relatively straightforward to resharpen on whetstones, making it a dependable choice for both home cooks and professional users.
LAMINATION:
The VG-10 steel core is surrounded by multiple layers of softer stainless steel, forming the knife's distinctive 33-layer Damascus construction.
The outer layers support and protect the harder cutting core while creating the decorative pattern that gives the Damascus Flame series its recognizable appearance.
GEOMETRY:
The knife features a double-bevel blade, suitable for both left- and right-handed users.
Its compact, narrow profile and finely sharpened edge provide excellent maneuverability and control during precise cutting tasks. The pointed tip is particularly useful for peeling, trimming, scoring, and preparing small ingredients.
As with other fine-edged Japanese kitchen knives, avoid cutting through bones, frozen ingredients, or applying excessive sideways pressure to the blade.
BLADE FINISH:
The blade features a striking Damascus Flame pattern, created by the contrasting layers of stainless steel surrounding the VG-10 core.
The flowing lines resemble flames spreading along the blade, creating a dynamic appearance that makes each knife visually distinctive. The polished finish emphasizes the layered pattern and complements the rich red color of the handle.
HANDLE:
The knife features an ergonomic red pakkawood handle with a full-tang construction. Pakkawood is a durable, resin-treated wood composite known for its resistance to moisture and comfortable, smooth finish.
Three rivets securely attach the handle scales to the tang, with a decorative mosaic pin in the center adding an elegant finishing detail.
A stainless steel bolster provides a smooth transition between the blade and handle, contributing to a comfortable grip and balanced feel during use.
The flat end of the handle, known as the ejiri, offers an additional practical feature for lightly crushing garlic and similar small ingredients.
