BLADE SHAPE:
This Nakiri is designed with one task in mind: effortless vegetable prep. If you cook a lot of veggies and already have a knife for meat or fish — or follow a vegetarian or vegan lifestyle — a nakiri is the perfect companion in your kitchen. Its flat edge and tall blade make chopping, slicing, and dicing vegetables efficient and satisfying.
STEEL:
The core is made of VG-10 steel coated with 13 Chrome Stainless Steel, offering professional sharpness with easy maintenance.
VG-10 steel is stainless steel with relatively high Carbon (C) content (1%), 15% Chromium (Cr), 1% Molybdenum (Mo), 0.3% Vanadium (V) and 1.5% Cobalt (Co). The combination of Cr, Mo, and V forms a lot of hard carbides, making the steel abrasion resistant which translates to long-lasting, smooth sharpness. Heat treated to the hardness of 60-61 HRC.
GEOMETRY:
It has a double bevel (50/50 symmetrical) blade.
BLADE FINISH:
The highlight of this series is the surface treatment withelectrochemical oxidation. It is a process commonly used in medical technology which provides the blade with superior corrosion resistance and gives it a refined dark appearance. The jet-black damascus creates a contrast between the deep black surface and the shiny edge, reminiscent of the dark sky of a new moon and the silver glow of a crescent.
Important for re-sharpening:
During sharpening, the black surface treatment may wear off partially. For a complete restoration of sharpness and aesthetic appearance, professional sharpening is recommended.
HANDLE:
The blade was fitted with an octagonal traditional Japanese (wa) handle, made out of ebony wood with an octagonal shape, so it will fit equally well into the hands of right- or left-handed users. Ebony is used because of its incredible features (hardness, strength, and rich aesthetic, including its dark color, visible grain), and rich cultural heritage.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:
✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.
❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
