The Takeshi Saji SG2 Damascus Steak Knife combines outstanding cutting performance with a bold, refined design. The blade features a multi-layer Damascus pattern with a core of powdered SG2 stainless steel, hardened to approximately 63 HRC, ensuring exceptional sharpness, long edge retention, and excellent corrosion resistance. The black (etched) blade finish highlights the Damascus structure and gives the knife an elegant, almost raw aesthetic.

The knife is crafted with exceptional precision: when folded, the blade is perfectly centered in the handle, and the handle’s finish is flawless. Its generous length—combining a sufficiently long handle with an optimal blade length—ensures comfortable use.

BLADE SHAPE:
A steak knife, as the name suggests, is a table knife designed for cutting steaks and other meats directly on the plate (we recommend using a wooden serving board).

In terms of design, it is an excellent example of a “Gentleman’s Knife” – sleek, minimalist, and thoughtfully designed for effortless precision with every cut. The ergonomically shaped handle provides a comfortable grip, and its length ensures the knife fits nicely in the hand. A strong, thick blade offers stability and excellent finger support when slicing steaks. With a little practice, it can even be opened with one hand, adding to its practicality.

Although designed as a steak knife, its versatile shape and high-quality blade make it suitable for everyday tasks – from food preparation to other kitchen and practical uses. The Saji SG2 Damascus is not just a steak knife, but a reliable, all-around tool that combines aesthetics, professional sharpness, and practicality in one.

STEEL:
High-carbon, powder SG2 steel offers exceptional sharpness, long-lasting edge retention, and excellent corrosion and wear resistance. SG2 steel blades will be able to achieve a fine sharpness due to the fine microstructure of the steel and will keep it—without having to worry about maintenance and corrosion.

LAMINATION:
A high hardness of the steel means that the blade won’t be very tough, so the blade’s core was laminated using the san-mai method to improve its structural integrity and subsequent ability to withstand impacts and prevent chipping. San-mai translates to “three layers” in Japanese, referring to a blade that is composed of a primary, inner layer of harder steel (hagane) and of two secondary, outer layers of softer steel (jigane) that protect the prior.

BLADE FINISH:
The black damascus finish not only highlights the blade’s layered pattern but also gives it a sleek, modern look that pairs beautifully with the Micarta handle.

HANDLE:
The Micarta handle provides a secure grip and excellent balance, while the folding mechanism allows for easy and safe one-handed use. Suitable for both left- and right-handed users, with a sturdy construction that prevents accidental blade closure.

BLACKSMITH:
Takeshi Saji (1948) is one of the most distinguished blacksmith masters in Japan. In 1992, he was officially certified as a “Traditional Master Craftsman”, a prestigious title awarded only to the best craftsmen in Japan. He’s a third-generation blacksmith and his workshop is located at the Takefu Knife Village in Echizen, where he forges knives together with his two apprentices.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
