Tojiro Petty Black Damascus 90mm, sometimes also called a paring knife, is a small and highly versatile kitchen knife. Paring knives offer more dexterity, precision, and maneuverability than the larger, multi-purpose knives, therefore its main tasks are peeling, slicing, and trimming.
Tojiro manufactures these blades from the unique-looking, high-quality VG-10 steel with the hardness of 61 HRC, which is clad into 36 layers of softer stainless steel. The blade is anodized black to highlight the black Damascus pattern which extends along the blade.
The blade extends into a traditional Japanese round handle made of chestnut wood, with an emphasized angle for a better grip, which makes it more suitable for right-handed users. Chestnut wood is corrosion resistant and used for railroad ties in Japan. Additionally, a fire surface treatment improves its water resistance.
