Mcusta Santoku Revolution Limited 180 mm [Ironwood] is a premium Japanese kitchen knife from the exclusive Revolution Limited Edition collection. Combining high-performance SG2 powder steel with a distinctive etched, darker blade finish and a natural ironwood handle, this special edition brings a more refined and luxurious character to Mcusta's popular Revolution series. Produced in very limited quantities, each knife comes in an elegant wooden box.

The 180 mm Santoku is a versatile all-purpose knife designed for everyday preparation of vegetables, meat, and fish. Its compact length, wide blade, and gently curved cutting edge make it particularly comfortable for chopping, dicing, and precise slicing on a cutting board. For larger cuts of meat, a longer gyuto may be more practical.

BLADE SHAPE:

Santoku means "three virtues" in Japanese, referring to its versatility when preparing vegetables, meat, and fish. Its wide blade provides excellent knuckle clearance and makes it easy to transfer chopped ingredients from the cutting board, while the relatively flat cutting edge is ideal for controlled chopping and push-cutting.

At 180 mm (7.1"), this santoku offers an excellent balance between cutting length and maneuverability, making it suitable for both experienced home cooks and professional chefs.

STEEL:

The blade features a core of SG2 powder steel, hardened to approximately 61 HRC. This advanced stainless steel offers excellent edge retention, high wear resistance, and good corrosion resistance, allowing the blade to maintain a fine, sharp cutting edge through extended use.

The SG2 core is protected by two outer layers of softer stainless steel in a san-mai construction, providing additional support and durability.

BLADE FINISH:

One of the defining features of this Limited Edition is its dark, etched nashiji blade finish, which gives the knife a more distinctive and sophisticated appearance than the standard Revolution models. The darker blade creates an elegant contrast with the warm, natural tones of the ironwood handle.

HANDLE:

The knife features a distinctive octagonal handle made from natural ironwood, an exceptionally dense, hard, and durable wood known for its rich brown tones and beautiful grain patterns.

Its ergonomic shape provides a secure, comfortable grip and excellent control during cutting. The natural variation in the wood grain gives each handle its own unique appearance, while the decorative mosaic pin adds a refined finishing detail.

As part of the Limited Edition collection, this knife is available in only a small number of pieces and comes in an elegant wooden presentation box, making it an excellent choice for collectors and Japanese knife enthusiasts.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
