This the first floating stone that i’ve ever used, my opinion is, the beat stone for this work, very easy to use. I recommend it for sure ^^

Excellent boning knife, I use it mainly with beef and pork to remove bones and cartilage, and sometimes to fillet medium-sized fish from the Mediterranean Sea or for processing octopus. It amazes for its lightness, it seems to have an extremely sharp feather in your hand, perfectly balanced, it remains sharp for a very long time.
It allows you to make long cuts without difficulty with a single gesture.
I use it to portion large pieces of meat and to prepare "tagliata" during my catering. Convenient even when you have to run during the service and you need to quickly cut many portions. It obviously needs a good familiarity with long blades (or it will be fun to acquire it)

Although I have the more fancy leather sleeves, those plastic ones are the most used as they are the most practical, great idea by SharpEdge, protective with that soft interior, easy to put on and off, cheap and maintenance fee. I have one for each knife I own.

A little knife beautifully crafted, feels like a piece of jewelry that I can't put down, makes me want to find more and more things to cut :) I love it!

Pretty much what I expected now from a Yoshida Hamano. The knife is posh, the Koi fish design is pleasing to the eye. It’s easy to sharpen and very well rounded for an everything mise en place knife. Highly recommended !

I tested the knife and I must say that I was impressed by the type of cut that is given by the metals added to the base metal vg10. Excellent purchase I highly recommend it.
