The Yaxell Super Gou Ypsilon Gyuto 200mm is a Japanese multi-purpose kitchen knife. The Super Gou blades feature an impressive 193-layer blade with a beautiful Damascus pattern and hand-engraved Kanji characters. It is a carefully crafted knife that offers an excellent cutting experience. The knife comes with a wooden sheath.

BLADE SHAPE:
The gyuto design is intended for versatile use, catering to chefs who prefer a medium-sized multipurpose knife suitable for meat, fish, and vegetables. The double bevel blade is 200mm (7.9") long and should work well for both chefs and experienced home cooks.

This knife is used for various cutting techniques, such as slicing, chopping, dicing, and julienne, making it capable of handling a wide range of kitchen tasks - from cutting large pieces of meat to finely chopping garlic.

STEEL:
This knife is made of SG2/R2 powder steel, hardened to around 63 HRC. Powder steels are currently the hardest steels available for knife making, which means the knife will keep a smooth and sharp edge for a long time. Due to the high chromium (Cr) content in its steel structure, it is also incredibly easy to maintain. The composition and microstructure of the steel provide extremely fine and smooth sharpness.

LAMINATION:
A high hardness of around 63 HRC means the blade won’t be very tough, so the blade’s core was laminated using the san-mai method to improve its structural integrity and subsequent ability to withstand impacts and prevent chipping. San-mai translates to “three layers” in Japanese, referring to a blade that is composed of an inner layer of harder steel (hagane) and of two outer layers of softer steel (jigane) that protect the core.

BLADE FINSIH:
In addition to the rich damascus pattern (193 layers!) , the blade is also decorated with 4 hand engraved kanji characters "Super Gou - the spirit of the samurai". For an added aesthetic touch, the Yaxell smithy has added a mosaic rivet in the centre of the handle.

HANDLE:
The knife is perfectly balanced thanks to its black micarta handle, which is extremely durable and wear resistant. The handle offers a secure and firm grip that will prevent your hand from slipping towards the blade. The bolster of the blade is stainless and ensures a smooth and comfortable transition between the handle and the blade. One rivet hold the knife securely attached to the handle. 
The lower part of the handle is flat and finished with a steel base, stamped with the traditional coat of arms of the samurai family, from which the Yaxell smithy originates. This part of the knife can also be used for various cooking tasks, such as crushing garlic.

✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
