Pro / Premium Knife Sharpening Set is the holy grail of sharpening tools. It is a must-have for professional chefs who take extra care of their knives, or for the knife nerds who want to explore what their knives are capable of—edge-wise.
This is the ultimate toolkit for professional chefs, experienced sharpeners, or knife enthusiasts who want to explore the full potential of their blades. This premium, no-compromise system is built around a complete progression of top-grade Japanese stones from Naniwa and Suehiro, providing everything needed for precise edge maintenance across a wide variety of knives and tools—including high-end Japanese knives, stainless steel knives, Western-style knives, and more.
This sharpening set contains everything to create an ultimate sharpening station:
- Naniwa Diamond Pro Stone - #400 – A premium diamond plate of lower granulation that is excellent for knife sharpening even when we are dealing with very hard steel and ceramics, for which regular whetstones prove ineffective or too slow. It is suitable for all types of steel. The low grit makes it especially suitable for repairing damaged blades and flattening other whetstones.
- Naniwa Sharpening Stone - #1000 [Traditional Stone series / T-210] – Stone with a grit of #1000 is used for general sharpening. This stone can serve as a starting stone to achieve good sharpness even with medium quality knives, used for slicing meat, seafood and vegetables.
- Suehiro Ouka - #3000 – A versatile stone that quickly sharpens knives, even medium-quality ones, creating a smooth, even edge. Minimal soaking is needed, and it works on all types of steel, Japanese or Western.
- Naniwa Sharpening Stone - #8000 [Super Stone series / S2-480] – For removing the burr after sharpening, and to polish the blade. It will leave a very smooth, fine edge which works best with meat/fish knives like gyuto, yanagiba, deba, sujihiki.
-
Naniwa Sharpening Stone - #12000 [Super Stone series / S1-491] – For removing the burr after sharpening, and to polish the blade. We recommend using this stone to give a final edge to shaving razors.
- Naniwa Flattening Stone #220 – Ensures whetstones remain perfectly flat for consistent sharpening.
- SharpEdge Adjustable Sink Bridge – This accessory is a game-changer. Designed for sharpening knives over any kitchen sink or on the kitchen counter as it includes anti-slip rubber at the bottom. It allows you to mount your sharpening stones securely over a sink, providing a stable platform and a constant water source.
- SharpEdge Leather Strop – The final touch for removing any microscopic burr left on the edge.
- Nagura (Dressing Stone) – Creates slurry on coarser stones (<1000 grit) and cleans/fixes small hollows on finer stones.
- Naniwa Rust Eraser – A handy tool for removing rust spots from your knives.
- Koyo "Green Rouge" Polishing Compound – Use this Koyo polishing compound on your leather strop to remove the burr and refine your edge. Blacksmiths in Japan have been using it for years on their polishing wheels, and this 0.5 kg (19 oz.) block will last for ages—perfect for your own strop, or even a friend’s! 🤓
With a full range of grits, you can handle any sharpening task—from heavy repair on chipped blades to a mirror-like polish for a razor-sharp edge. The Naniwa #1000 serves as the workhorse for everyday sharpening, while the Suehiro Ouka #3000 bridges the gap beautifully, adding bite and refinement to the edge. From there, the Naniwa #8000 delivers a high-level polish, and the ultra-fine Naniwa #12000 takes it even further—creating a mirror-like finish that few other stones can match.
The set also includes practical accessories to make sharpening efficient and precise: a large flattening stone to maintain perfectly flat whetstones, an adjustable sink bridge to secure stones over a sink for mess-free sharpening, and a leather strop for final burr removal.
Not just tools—this is a full sharpening system for professionals. Every stone and accessory is selected to help you achieve the cleanest, sharpest, and most precise edge possible.
