Stone with a grit of #2000 can be used for general sharpening of thin carbon steel knives, as a medium, in between stone for stainless or powder steel knives, or as a final stone for softer steel knives (eg German knives).
Sharpening stone (whetstone) from the Super* series of the Japanese producer Naniwa enables fast and efficient sharpening of Japanese knives. This is a splash-and-go stone, so it is not necessary to soak it before sharpening, just splash some water on the top side of the stone and start.
The advantage of sharpening with a whetstone is that by using the correct technique we can achieve a remarkable sharpness of the blade, the disadvantage, however, is that it is necessary to learn the correct technique.
For easier sharpening, we recommend purchasing a Stone Holder (Sink Bridge) to ensure mess-free and a stable position of the stone during sharpening.
