#2000 grit whetstone is a great whetstone to use with knives that are made of softer steels. While it can be used to sharpen Japanese knives, we recommend using this stone for German knives, or knives made of softer steels (< 57 HRC). It can be used for general sharpening as well, but it will perform best as a final, polishing stone, especially in combination with our #400 grit stone.
Due to years of experience with sharpening knives, we decided to introduce our own line of sharpening stones under our brand SharpEdge. These stones are suitable for beginners and intermediate sharpeners who need a reliable and affordable sharpening stone. There are better performing stones (less wear over time) in the market, but we find our stones offer a great price/performance ratio for those who are relatively new to knife sharpening. More experienced sharpeners will appreciate our collection of whetstones from Japanese manufacturer Naniwa.
The advantage of sharpening with a whetstone is that by using correct techniques we can achieve a remarkable sharpness of the blade, but it is necessary to learn the correct technique.
This whetstone does not include a non-slip base stand. If you don't have one, we recommend getting yourself a Stone Holder which will keep your stones from moving around. It will get on your nerves when the stone will move around your countertop during sharpening. And it's not the safest too. Wet kitchen towel can also work to put underneath the stone, but it will not keep your stone entirely fixed (and you'll end up with dirty kitchen towels).
