Hasegawa’s soft cutting boards are top-of-the-line cutting boards, especially suited for delicate Japanese kitchen knives. The cutting board is machine-washable and bend-proof due to its wooden core being sandwiched between two plates made of specialized rubber and a side layer made from polyethylene. This board’s rubber surface is a great substitute for wood due to its similar characteristics.
This board’s specialized rubber surface is easy to clean, doesn't absorb flavors and, above all, has less effect on the sharpness of the blade. With some cutting techniques, the thin cutting edge of the knife may chip, so choosing the right cutting board is crucial for longer edge retention. Harder plastic cutting boards usually don’t mix well with the harder steels that Japanese blades are forged from, and can sometimes cause them to chip. Hasegawa solves this issue with the addition of a wooden core that is then sandwiched between two layers of specialized rubber. The result is a lighter, more easy-to-handle cutting board which is at the same time sturdier and won’t bend when weighed down or washed in the dishwasher.
This cutting board is also more hygienic – it doesn't absorb scents and flavors from different ingredients that might get left behind in wooden boards. It’s also completely safe to wash in the dishwasher – if you have one that’s big enough.
