Sakai Takayuki Garasuki Inox 150 mm is a robust Japanese poultry knife designed for breaking down chicken, separating meat from bones, and working around joints and cartilage. Similar to a honesuki but with a sturdier construction, its distinctive triangular blade features a strong spine and pointed reverse tanto tip for precise, controlled cuts. Fitted with an ergonomic pakkawood handle and stainless steel bolster, it offers a secure, comfortable grip for demanding butchery tasks.

BLADE SHAPE:

Garasuki is a traditional Japanese poultry knife, similar in shape to a honesuki but generally thicker, heavier, and more robust. Its triangular blade, strong spine, and pointed reverse tanto tip make it particularly useful for breaking down poultry, separating meat from bones, and working around joints.

At 150 mm (5.9"), this garasuki offers excellent control when working in tight spaces. The thicker heel provides strength for more demanding tasks, while the narrower section toward the tip allows for precise trimming, removing tendons, and separating connective tissue.

The reverse tanto tip is strong and sharply pointed, making it useful for piercing poultry skin and navigating around bones and joints. Its shape allows controlled, precise movements when trimming fat or removing meat from difficult-to-reach areas.

Although more robust than a typical honesuki, the garasuki is not intended for forcefully chopping through thick bones. It is best used for separating joints, cutting cartilage, and working closely around the bone.

HANDLE:

The knife features an ergonomic Western-style (yo) handle made from durable pakkawood, secured to the tang with stainless steel rivets. The stainless steel bolster provides a smooth transition between the handle and blade, ensuring a comfortable, secure grip and precise control during use.

Blade wear depends on the quality of steel, usage and maintenance of the blade. Japanese knives are made of high-quality steels. Follow these tips to keep your Japanese knife in top-notch shape:

✔ Use a wooden, plastic or rubber cutting board.
✔ After use, wash the knives and wipe them dry.
✔ For storage, use a knife holder or a protective knife sheath (saya).
✔ A good cutting technique is your best bet to prolong sharpness.
✔ Use sharpening stones to sharpen the knife.

❗️Don’t leave the knife in the sink. Wash it by hand.
❗️Don’t wash the knife in the dishwasher.
❗️Don’t use the knife on glass, ceramics, marble or steel surfaces.
❗️Don’t scrape the food off the cutting board with the edge of the blade. Use the spine of the knife instead.
❗️Knife is a tool intended for specific use - cutting food. It is not a can opener, screwdriver, trowel, wire cutter, hammer etc.
