West Japan Tools pan is handmade of carbon steel by local craftsmen in the Fukuyama area in Japan.
The steel pan heats up very quickly, but also holds the heat evenly over the entire surface and does not overheat. The low and curved sides allow moisture to burn off more quickly and evenly, resulting in better and faster cooking. The short and curved handle allows a good grip.❗️The handle heats up during cooking, so always protect your hands with a kitchen cloth.
Due to the high carbon content, the pan will turn dark during use and therefore requires proper pre-treatment of the surface with oil!
USE:
- Suitable for baking in the oven
- compatible with induction hob
- suitable for ceramic glass hob - this type of hob gives off inconsistent heat, which risks overheating the pan too quickly, so heat the pan slowly on a ceramic glass hob
CARE:
Like with carbon steel knives, this pan also requires some proper care. The pan is the most sensitive when it is still new and a patina had not developed yet, but later, patina will protect the surface.
- Wipe it regularly with a clean and dry cloth (you can also do this during use).
- After use, rinse it with lukewarm water and wipe it dry.
- Coat it regularly with knife maintenance oil or plain refined sunflower oil.
